      Title: Broccolini w/Parmesan Breadcrumbs

      Yield: 4 servings

      1 sl Day-old bread; in small
           - pieces
      1 tb Unsalted butter
           Salt
      2 bn Broccolini or broccoli rabe
      2 tb Olive oil
      2 cl Garlic; minced
      2 ts Crushed red chile flakes; or
           - more
    1/4 c  Fresh grated Parmesan
           Grated zest and juice of 1
           - lemon
           Fresh ground black pepper

  Broccolini, or baby broccoli, has a mild flavor, but you
  can substitute broccoli rabe for more of a bite. If you're
  serving a larger party, double the recipe and saute the
  broccolini in two batches.

  Place the bread in a food processor and pulse until the
  crumbs are about the size of small pebbles.

  Melt the butter in a large skillet over medium-high heat.
  Add the crumbs and toast for about 3 minutes, shaking the
  pan often, until the crumbs are nicely browned and crisp.
  Transfer the crumbs to a small bowl and let cool.

  Bring a large pot of water to a boil; add a few pinches of
  salt. Cut off the ends of the broccolini and discard. If
  the stems are tough, shave the outer part using a
  vegetable peeler. Add the broccolini to the boiling water
  and blanch for 1-2 minutes, until stems are crisp tender.
  Drain, and plunge the broccolini into ice water to stop
  the cooking and set the color; set aside.

  When ready to cook, pat the broccolini very dry with paper
  towels.

  Using the large skillet, heat the olive oil over
  medium-high heat until shimmery. Add the garlic and chile
  flakes, and cook, stirring about 1 minute. Add broccolini,
  stir to coat, and cook, stirring occasionally, about 2-3
  minutes.

  Add half the breadcrumbs, half the Parmesan, and the lemon
  zest. Stir to combine and continue cooking for another
  minute. Take the pan off the heat.

  Just before serving, add the remaining Parmesan and bread
  crumbs, and season to taste with salt, pepper and lemon
  juice.

  Serves 4
