Wrong. It doesn't say, "I Jesus choose Peter to found my church" ...
what was said is all very vague and even if the original was translated
correctly, it more than likely wouldn't have said that Peter/Simon is a
rock, when the entire bible, before and after Matthew, refers to God as
the rock.

Better read that line again. It is referring to the 'book' of Revelations.
i.e. the book of Revelations is written as prophecy as seen through the
eyes of John, the author. Adding to or taking away from the book of
Revelation would be what it's talking about. But if you want to play games
with that phrase, the Catholic church has added to the bible by adding
chapters that aren't part of the original scriptures.
