Cooking Echo Picnic, 2012 NEWS

Plans for the Cooking Echo Weekend Picnic continue!

Picnic Dates Extended to July 23rd!

Picnic Dates:  July 19,20,21,22,23

Location: 2682 Slaterville Road, Slaterville Springs, NY at the new home of
Janis and Ron Kracht.  It's about 9 or 10 minutes from Ithaca NY.

Before the picnic, I'll be stocking up the kitchen with "stuff" so not only
will I be able to cook some of our favorite foods, but so will some of the
picnic visitors :) Sometimes people let me know if there will be something in
particular they'll need for the dish they're planning on making..  and
sometimes, in the midst of the picnic, a bunch of us will run out to good
grocery store to get a needed ingredient.  No problem either way.

If you're thinking of visiting the Cooking echo to catch up on the discussion,
etc., you can find some messages pertaining to the picnic with the subject of
"2012 Picnic".  Or.. just do a search if you bbs lets you do so, for "picnic".

When we had the picnic at our house last time (I think that was 3 years ago), I
made our 'favorite' desert, Tiramisu, our favorite "lunch/dinner" which is
Reubens, and our holiday special fare of pizza-fritta (fried pizza dough).  I'm
not sure what I'll make this year..  maybe "White Pizza", or Hot Mussells and
linguine, or Stuffed Calamari with a side of Fried Calamari..

=Fried Calamari=
Preheat oven to 350F

1 pound Calamari tubes and tentacles, cleaned 1 cup Italian flavored Bread
Crumbs 1/4 cup olive oil
1 table spoon olive oil

Coat a 13x9 cookie sheet with 1 tablespoon olive oil.  Slice calamari tubes
into 1/2 inch rings.  Place the 1/4 cup of oil in a bowl.  Place the bread
crumbs in an additional bowl.  Dip the calamari rings in the oil, a few at a
time, and then dip in the bread crumbs.  As you remove the rings, shake off the
excess bread crumbs and place on the cookie sheet in single layer.

Bake at 350 for 10 minutes.

Rather than "oven frying", or baking the Calimari, you can put a small handful
of the breaded rings in a fine mesh chinese strainer, and dip them in pan of
olive oil to deep fry them quickly.  In that case, don't overfill the strainer,
and deep fry them just until done (about 2-3 minutes).  Drain the fried
Calamari on paper towels.

These don't last more than a few minutes over here :)
