Cajuns who know what they are doing boil crawfish the way
crawfish should be boiled.  Californians who try to imitate
Cajuns always get it wrong.  Completely wrong.  Probably
because they are Californians.

Years ago (decades) I visited a "Cajun" restaurant in California.
It was the most horrible experience in my entire adult life.
The chef thought he was preparing blackened redfish, but had
done nothing of the sort, creating a fish that was burnt to
the crisp, more like a lump of charcoal, rendering it totally
inedible.  The other items were just as bad, if not worse.
Even the waitress agreed, and apologized for the lousy food.

Americans will buy anything.  And eat anything.  Not only
will Americans buy and eat anything, but they will eat plenty
of whatever it is they buy.  And it is making them sick.  So
sick that they can never get well again.

Cajuns are not a fat people.  The traditional Cajun diet
will not make anybody fat.  But Cajuns who adopt an American
diet become fat.  The same is true of Japanese.  And Native
American.  And Vietnamese.  And many other peoples.

I'm going to have to make a batch of that stuff with local crawfish
and see how it turns out.

I'm sure it is, but there are similirities.  We eat lots of
crawfish with family and friends, and at public places there
sometimes is a Cajun band and a fais do do (dance).  The
singing is usually done by the band, and most often in French
rather than English (or Swedish).

August would be out of season in Louisiana.  But if word ever
gets out that there are crawfish to be had in Sweden during the
month of August, you may be in for an invasion of Cajuns.

Snapsvisa?  Traditional drinking songs?  I am sure college kids
come up with newer and better drinking songs, every day.

There are actually two varieties of crawfish consumed in
Louisiana - one variety east of the Mississippi River, and
one variety west of the Mississippi River.  Both are good,
but most folks find the wilder variety in the west, which
is in saltier water, to be better than the variety in the
east.

Now where did I put my crawfish traps?  Where, oh where,
could they be?  Put a piece of salt meat in the trap, place
the trap in prime location, and come back later to retrieve
the prize.  Oh I wish I was a kid again ...
