The default is init=/sbin/init, that should tell you what it is for. On a
heavily broken system, using init=/bin/bash gives you a root shell and nothing
else. That's even less than single-user mode, you even have to mount
filesystems by hand.

It's something that is interpreted by Red Hat's initrd. It goes looking on your
disk for a filesystem which has the "/" label on it. The kernel doesn't know
anything about it.

The label is stored in the filesystem's superblock. It wasn't copied by your cp
-ax, of course. Go change /etc/fstab, and change the "LABEL=/" to "/dev/hda3"
(that's the right device, right?). Or use the e2label program to set the right
label on /dev/hda3.

Now, if you still have the original disk in the system, make sure only one
partition in your system has the "/" label, otherwise Red Hat's initrd may get
confused about which partition it is supposed to use as /.

This is something very much Red Hat-specific. I've never liked it much. One of
the first things I did on my Red Hat installs was to change /etc/fstab *not* to
use the label. I needed that for booting my own kernels *without* using an
initrd.
