1) re. Virtual sessions-- they're handy if you mostly want to work in one
environment, but from time to time- a single, sometimes-used program, for
instance, is needed that doesn't support that environment... for instance, a
Mac-using web-designer who wants to see how well (or poorly) his pages appear
when viewed in IE for Windows or Firefox on Ubuntu.... Or a Windows 7 using
web-designer who wants to see how his pages will appear when viewed in IE 6 in
XP.

Presumably, those users could set up their systems for multi-boot- but that
requires shut down/restart- and doesn't include the option for making changes
(using software running in their most-used OS) and viewing the results of those
changes in the virtual session.

It's a lot more efficient than either rebooting or maintaining multiple
computers on the same desk!

Not necessarily something you need, however. Note, though, that virtualization
may becoming 'mainstream' in the next few years without you noticing it... one
of the side-effects is that the hardware is virtualized- meaning everyone using
a particular virtualization system (for instance, VMWare) have Windows (or
whatever OS) thinking its using the same set of virtual hardware- regardless of
the real hardware installed. This is a big advantage for the PC manufacturers
and tech support people- who would no longer have to deal with the almost
infinite variations of hardware & drivers installed in 'real' PCs. There's some
thought of moving to OS 'stubs' that load a minimum of services (including
support for the real hardware on systems) and then loading virtualized OSs that
provide the user interface, applications, etc- all on top of a standardized
driver set.

In theory, the user would never notice the difference.

2) re. Macs vs Windows for graphics & publishing-- the major applications: the
Adobe suite of software, Quark XPress, etc are available, in pretty much
feature-identical versions for both Windows and Mac. Many of the add-ons are
also available for both platforms. Some, however, remain Mac-only... In video
and sound production, Apple has produced several well thought-of applications
that are favoured by many in those fields: Final Cut Pro for video editing and
Logic for sound recording and editing- and made sure these are Mac-only.

So there are far more Windows-users in these fields than was true a decade or
15 years ago... but there are still many who continue to be Mac-users.
