Warning.  The chops will be tough made that way.  Looks good but wont work that
well I bet.

Best bet, do not dilute the can of soup at all and add 1TB vinigar.  I'd tend
to a rice wine vinigar this time but a white wine one would match well too. 
Not sure if balsalmic would work (might be too heavy tasting).

Now, if you used a fattier pork-steak cut, this might work.  That or a small
pork roast (about 1.5 lbs or 1 lb).  Get rid of the veggie oil and use
leftover bacon fat for this one.

The recipe looks good overall, but long time crock cookery tells me this one
wont work quite as designed because it's too much liquid for that type of meat
and needs a tenderizer to work at all.

The simplist adaption would be 1/2 the can of undiluted soup and a splash of
rice wine vinigar.  Low for about 4 hours feels 'right' but might take longer.
Sortof the thing you toss together at lunch time then have for dinner, even on
'low'.  Not all crockpot recipes take forever <g>.

What makes this comment?  Long experience with lower fat meats in a crockpot.
Because of my cholestrol issues, I always try to reduce the fat so have
tripped over this one many a time.  Any low-fat meat in a crockpot, needs
serious liquid reduction to work or it becomes a broth addition and you toss
the meat out.
