To me, Lotte Lenya's version is #1, Satchmo's is #2. There
is nothing beyond.

I hope that loser you told me about wasn't the music major!
[defending the honor of musicians] She's surely not going
out with that good-for-nothing any more! Distance is a
wonderful thing sometimes.

Longjing Shrimp
cat: main
servings: 8

1 kg Big fresh shrimp
1.5 g Tongjing tea
1 egg
1.5 g rice wine
3 g salt
40 g starch
75g cooked port [sic] lard

1. Remove the shell of the shrimp, keep it as a whole shrimp, watch
the shrimp for 3 times, dry it with clean towel

2. Put the shrimp in to bowl, add salt, egg white, mix until sticky,

3. Add starch, well mix

4. Put Longjing tea in to a cup, brew it with 50g boiling water, do
not cover, leave for 1 min

5. Drain 40g tea soup, keep the left for other usage

6. Heat the wok with lard, put in the shrimp, quick fry with
chopsticks, bring the shrimp out within 15seconds, drain the oil

7. Keep the same wok, reheat, put the cooked shrimp, tea leave and
tea soup, wine, salt, quick fry

8. Serve
