I just had something called Cajun calamari steak saute,
which was none of the above. It was somewhere between
delicious and appalling. Explanation: I was with my
composer friend and his family, and his wife, who has
strong opinions about things, insisted we go to a
particular pizza place! for lunch. Now, as you know,
cheese, especially mozzarella, which is full-lactose,
doesn't agree with me, and what you don't know is that
J can't have wheat!! Well, back before she couldn't
have wheat, she used to take her sons to this place,
and she discovered a very very South Beach dish that
struck her fancy, and she continues to patronize this
small local pizza chain (called Willow Something Pizza)
on the strength of the Tropical salmon, which is a
grilled 6-oz filet on a bed of baby spinach and topped
with mango-tomato salsa, which makes it non-Atkins but
palatable. It's actually pretty good, I admit. The rest
of the family had pepperoni mushroom pizzas at an
eye-opening 10.99 per individual portion. There was
little on the list that appealed to me except for this
calamari steak appetizer ... turned out to be strips
cut from a big cuttlefish breaded with Italian-style
(i.e., basil and Parmesan-Romano flavored) breadcrumbs
with a few grains of cayenne thrown in, poached in oil
at a very low temperature, perhaps under 200F. It came
in a pool of grease. The mollusc itself was tender and
delicious; the rest of the presentation appalling. And
in amid the strips of fish were tiny dots of something
white; I hoped garlic, but one taste yielded the knowledge
that these dots were shards of mozzarella, and the
temperature of the dish had not been high enough to melt
the cheese. Will I go back? Not under my own steam, but
perhaps if I see these friends any more I may have to,
in which case I WILL JUST HAVE A SALAD.

I do - haven't actually ordered a piece of fried finfish
in quite a while.

White Castle Dim Sum
cat: odd
yield: 1 batch

10 White Castle hamburgers
1/2 c green onion, chopped
1 Tb soy sauce
1 oz garlic, finely chopped
1 oz ginger root, shredded

Separate the buns from 10 freshly made burgers. Remove meat
and scrape cooked onion from buns, reserve both. Use a rolling
pin to flatten buns to 1/8-inch thickness. Chop the hamburger
meat and cooked onion into small pieces. Combine in bowl with
chopped green onions, garlic, and ginger root. Add soy sauce
and mix well. Divide meat mixture into 20 equal parts and
place in the center of each flattened bun. Pull 4 corners of
flattened bun up around meat and pinch closed. Place in bamboo
steamer for 5 minutes. Serve hot with soy sauce, duck sauce,
and hot mustard for dipping. Serves 4 to 5.
