Here are two ideas that don't need pasta. They may sound a bit weird
but are allegedly quite tasty...

MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Watermelon Salad -- Paula Deen
 Categories: Salads, Fruit, Cheese, Herbs
      Yield: 10 Servings
 
      1    (5-pound) watermelon
      1    Vidalia or other sweet
           Onion
    1/4 c  Red wine vinegar
           Salt and pepper
    1/2 c  Extra-virgin olive oil
      2 tb Chopped fresh mint
      4 oz Feta cheese, crumbled
      6    Whole mint sprigs....I used
           Handful
 
  Cut the flesh from the melon and cut into bite size pieces, removing
  and discarding the seeds, and set aside. Peel and slice the onion into
  rings.
  
  In a small bowl, combine the vinegar, salt, pepper, and whisk until
  salt is dissolved. Slowly whisk in the olive oil, a few drops at a
  time. Add in the chopped mint, taste, and adjust seasonings.
  
  In a large bowl, combine the melon, onion, and feta. Pour the dressing
  over the melon mixture and toss gently until everything is coated and
  evenly mixed. Garnish with mint sprigs.
  
  To serve, divide salad among individual plates and garnish with mint
  leaves.

      Title: Beet, Feta, and Mint Salad
 Categories: French, Salads, Vegetables, Cheese, Herbs
      Yield: 6 Servings
 
      3    Cooked beets
    120 g  Feta
      6    Sprigs mint
      1    Handful mache
      2 tb Peanut oil
      1 tb Walnut oil
      1 tb White wine vinegar
           S, p
 
  Rinse, dry, stem, and julienne the mint. Whisk the oils with the
  vinegar, salt, and pepper. Rinse and dry the mache. Cut the beets
  and cheese into small cubes; combine with the mache in a salad
  bowl. Add the mint and toss with the vinaigrette.
