  Let us know how it turns out.   I picked it out of my file because of
  the combination of ingredients -- but have never had it.  As to Cox
  apple, I don't know if I've seen them in the store.   According to
  Wiki, they are a British breed.  A partial quote from the Wiki page
  is:

Cox is highly regarded because of its excellent flavour, and often
thought as the best flavoured apple. The flavour and texture of the
variety changes from complex acidic and crunchy in early September to
more mellow and softer after storage. However like all the best
examplars, it is difficult to grow and tends to catch all manner of
diseases. As a result, apple breeders have hybridized Cox with other
varieties to improve yield without too much loss of flavour.

  I'd be tempted to substitute JonaGold, Fuji, Gala, or Ginger Gold.
  All slightly different eating apples.  Each would be a little
  different in the final dish.

  And now for another uncommon ingredient:
  (Mirliton aka chayote).

MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Mirliton Soup
 Categories: Mirliton, Soup, Seafood
      Yield: 6 servings
 
      1 bn Green onions - chopped
    1/2 sm Green pepper - chopped
      3    Sprig parsley - chopped
      4 tb Butter
      2 tb Flour
     14 oz Chicken broth
      1 c  Water
    1/2 lb Ham seasoning cubes
      1 lb Shrimp - raw, peeled, cut
           -into bite-sized pieces
      2    Mirlitons - boiled, peeled
           -and chunked
    1/2 c  Whipping cream -
           -(evaporated milk may be
           -used)
           Salt and pepper to taste
           -(Cajun seasoning may be
           Used instead)
 
  Sauce green onions and green peppers in butter; add flour and stir
  well. Add chicken broth and water and simmer 10 minutes.  Add
  mirlitons, ham, shrimp and parsley.  Simmer 10 minutes. Remove from
  heat; stir in whipping cream.  Serve when hot.
  
  Serves 6.
