CS> Ok found the powder today. Thailand brand. I have about 1 cup volume

CS> Well, they had a few versions but the one I got was based on size
CS> being right for our uses. I didnt recognize the brand names of any of
 CS> them.

GJ> That sounds a good size to start with. You can experiment with
GJ> quantities. A little powder has a thickening effect in stews as well
GJ> as adding the coconut flavour.

Yes, made some thai-like soup with it last night for Charlotte's birthday
dinner. It gave me something to use up the spinach stems in <grin>. Tossed in
some tofu (briefly fried first with chile and roasted sesame oil), some bits
of frozen mussels, some of those pink dried baby shrimps, a scattering of
niboshi at the end so still crunchy when served, and some other flotsam that
leaped out of the fridge to join the party. I'll need to experiment a bit with

it before I MM any of my creations. Last night was good but I didnt write down
enough details to give a recipe and i think with practice, I can make it
better.

GJ> Chili oil can be a fun way of adding a bit of kick to fried foods.

CS> We dont fry often though. I tend to like it in noodle soups.

GJ> Yes, it would be good that way.

It's how I'm actually more familiar with using it. I'd tell you what brand my
chile oil is but I can't. Writing is in what looks like Thai, with smaller
characters that look Chinese. On the back (where there was no label, blank
spot) is a stick on that says it's 'chile oil, rapeseed oil, and spices' then
the standard USA nutritional info in tiny font type. It's a proper one like
you get in Asia at the better places.

GJ> Yeah, right! What is your definition of "normal"?!!
CS> Snicker, Peanut butter and jelly maybe. Though she also likes turkey
CS> pastrami and cheese with lettuce.

GJ> OK, other kids would see that as normal, and realise that Charlotte's
GJ> mother is not completely weird.

Too late! hehehe. Thats ok, as usual I'm the kind of wierd that appeals to
the
kids.

GJ> I'm waiting to hear of her classmates' reaction to the fishsticks. :)

CS> The girls (all but one) went 'ewwww' and the boys loved it. She gave
CS> 5 away and ate the 6th herself, demo'ing how to nibble around the bones
CS> after peeling back the crispy skin.

GJ> Haha! Of course the fish sticks would add to your reputation. The
GJ> kids will go home and tell their mothers, who in turn will probably
GJ> go, "ewww", and wonder if their children are safe at that school. Does
GJ> that school have any social functions where parents meet?

Grin, little group she eats with all have some odd'ish foods to add to the
group from time to time. The one girl who didnt go 'ewww' and ate one, used to
live someplace in southern Europe and Charlotte says she brings a lot of
italian
and greek foods. Charlotte got the impression her friend had had something
like them but probably not spiced the same. Her friend is up next to bring 6
'squid sticks' which are apparently whole cleaned baby squidlits marinaded and
spiced somehow then not sure if they are baked, grilled, or fried.

It sounded interesting and something I might like to try to make. I can get
the
baby squid in tray packs of 12 at the local Asian Grocery. I note I'm calling
them 'baby squid' but that is relative to Japan where you see the average ones
are about 8-12 inches in body. These are 3-4 inches in body and in some parts
of the USA, that's all they ever see unless it's pre-cut to rings and frozen
in bags. Squid is a specialty food in the USA, not a standard item eaten 2-3
times a week like in Japan. I find if properly double wrapped when frozen, it
works fine for about 2 months frozen time before it degrades. Double wrapping
is a must though as it freezer burns easily if not treated correctly.

 GJ> (Thoughts...)

Oh, yeah, we have a few things where the parents can meet. The musical show I
typed to MLoo was the first one.

CS> some fruit. Something hot in her thermos (dashi-tofu and whatever else
 CS> jumps in likely).
GJ> Resulting in an appetising aroma floating out from her cup to interest
 GJ> her school friends.
CS> Yup. Did a simple tofu-dashi one there with some slivers of radish
 CS> and a little
CS> leftover bok choy. A common enough thing here. Added a little
CS> pinky-nail of miso to it now that I have bulk miso again.

GJ> Sounds lovely! I hope you gave her extra lunch to make up for the
GJ> boys raiding her fish sticks.

Oh sure! (4 boys and one girl). Also they all traded back stuff. I mentioned
the clandestine parent thing where we all add a bit extra to the lunches incase
one of the kids forgets so they don't have to be embarrassed and sign for a
loaner lunch money. There's 10 kids at her table and Charlotte says everyone
has forgotten at least once (including her) but there's always enough. I
usually pack about 1.5 times what Charlotte will eat. Sometimes leftovers
come back home to be tossed but more often than not, it finds a home.

The one that always finds a home is whatever was in the thermos.

GJ> My son who is living with me at present sometimes takes my left-overs
GJ> to work for lunch, heating it in the microwave. When it is something

CS> I'll be doing same as there's nothing open to eat at on the base I am
CS> at. Daytime they have a few places, but not much.

GJ> With Winter coming on over there you will need something warm to keep
GJ> you going on night shifts.

 GJ> MMMMM----- Recipe via Meal-Master (tm) v8.05

GJ> Title: Gai Tom Kha #1 (Chicken in Coconut Milk Soup)

Looks good but some of those things are hard to find stateside or very
expensive
if you can find them. I know some workable substitutes though for some aspects
there like the kaffir lime = calamansi powder.
