So you too occasionally feel that tiny hesitation before
trying something aged well beyond industry standards. But
then you (as do I) proceed, trusting in the benevolence of
the canning factory and the powers above.

I still have a bit of the oil left as well, to add a
tad of depth to a tomato sauce or something. I'm more
into the simple pleasures, anyhow most of the time.

Adria is pretty outlandish, but Heston Blumenthal, who Ian
Hoare thinks sets the best table in the world, thinks that
Adria is the "best chef in the world," so although that
doesn't count for everything, it doesn't count for nothing
either.

I was never eager to be a star anything, so not making
argan and tea foam doesn't bother me.

Fancifying simple dishes just so as to be accused of
being creative isn't my style.

Knickerbocker glory

Serves: 2 

2 ts chocolate spread
4 mini meringues
h - For the Eton mess
3 fl oz double cream
2 oz raspberries
1 oz meringues, smashed
2 ts chocolate spread 
h - For the coulis
2oz raspberries
1 Tb red wine
1 Tb caster sugar
1/2 lemon, juice only
1 segment of orange 
h - For the lime cream
4 fl oz double cream
1/2 lime, zest only
1 Tb icing sugar
1/2 lime, juice only
2 oz raspberries, to serve


Spread 1 Tb chocolate spread on the flat side of a
meringue and sandwich together with another. Repeat
with the other two meringues.

Place the meringue sandwiches into a tall serving
glass or dish and set aside.

Meanwhile, make the Eton mess by placing the cream into
a large bowl and lightly whip to form soft peaks.

Add the raspberries and the smashed meringues and fold
together lightly.

Stir in the chocolate spread to leave a rippled effect.
Place the Eton mess in the glass.

To make the coulis, place the raspberries, wine, sugar,
lemon juice and orange segment into a mini food processor
and blend together until smooth. Drizzle half the coulis
into the glass on top of the Eton mess.

Meanwhile, make the lime cream. Place the cream and icing
sugar into a large bowl and whisk together to form soft
peaks. Add the lime juice and zest and fold to combine.

Spoon the lime cream into the glass.

Sprinkle raspberries on top and then finish with the
remaining coulis. Serve.
