You gottum right, and you were to my knowledge the only
responder. So next time I see you, maybe I'll buy you a
glass of Mutton Caddy or something.

Carl Orff, Carmina Burana, North Arkansas Symphony Orchestra,
Schola Cantorum, University of Arkansas Master Chorale, and
University of Arkansas Children's Choir, Jeannine Wagar,
conductor, Walton Arts Center, Fayetteville, Arkansas,
April 22, repeated at the Arend Art Center, Bentonville
tomorrow (may have happened by the time you get this).
I tried to convince people to go spend half our paycheck at
Doe's Eat Place this afternoon before the show, but no
takers.

Tamales
Cat: southern, starter
Yield: 25 to 30

h - Meat Mixture
5 lb ground chuck 
1/2 c diced red pepper 
1/2 c dried onions 
1/2 c garlic powder 
1/4 c salt 
Water, to cover
h - Meal Mixture
7 1/2 lb plain cornmeal 
1/4 box salt 
1 1/2 c fresh ground onion 
1/2 c fresh ground garlic 
Chile powder 
Cumin powder
h - Tamale Boil Mixture
1 Tb salt 
1/2 Tb garlic powder 
1 ds red pepper 
Cumin powder and chile powder, to taste 
3 oz tomato paste 
1 ga water

Meat mixture - Combine all ingredients with water and
cook until meat is done. Strain meat and set aside.
Reserve liquid for later use.

Meal mixture - Combine all ingredients and mix well.
Grind in grinder and add to meal mixture. [M says, ??]
Add 1 gallon of reserved liquid from meat mixture. Mix well.
Let meat and meal mixtures cool overnight in refrigerator.

Tamale boil - Combine ingredients in a large pot and put
over high heat. While boil mixture is heating, spread meal
mixture in tamale wrapper. Add meat mixture to center.
Roll tamales. Either corn shucks or tamale papers may be
used. Prepare according to package instructions. Place
tamales in large pot. Pour boil mixture over tamales and
cook for 3 hr. Remove from heat and set aside for 30 min.
Add more water to cover. Cook for 1 additional hour.

This recipe was provided by professional chefs and has
been scaled down from a bulk recipe provided by a restaurant.
The FN chefs have not tested this recipe, in the proportions
indicated, and therefore, we cannot make any representation
as to the results.
