For raw takeoff power, the 757 and 777 are said to be the
royalty. The 727 achieves its amazing climb angle because of
its extreme rear weighting. Though it was impressive, too, in
the noise department, inside the cabin the engine noise was
much muted (except, of course, in the far rear of the aircraft
- when I sat in row 23 once Delta, it was deafening (actually
since then I have sat in row 22 and 26 on United, with equally
unpleasant results, but that was when I was too cheap to upgrade).

You're not the first person to say that. Bear in mind that an
aimed weapon might be even worse in my hands. I'll tell you a
story about me and the firing range. I had a target to fire at,
and when I'd finished my stint, my target was blank. Turns out
I'd been aiming at (and mostly hitting) someone else's target.

When the guy handed over the 10- or 12-oz "pint," I asked if
that was the only size glass, he said, nastily, you want something
smaller? I should have said, "your brain, perhaps" and walked out;
but I was shell-shocked enough just to respond reasonably politely.
What was that all about? Recovering barman or something?

Steamed Scallops with Garlic Sauce
cat: shellfish, Chinese, main
servings: 4

12 oz scallops
1 Tb rice wine
1/2 Tb cornstarch
3 green onions
4 sl fresh ginger
2 Tb peanut oil
2 ts minced garlic
1 Tb dark soy sauce

Rinse scallops, drain and dry with paper towels. Cut each one
crosswise into thin pieces about 1/2" thick. Mix scallops with
wine and cornstarch. Place in shallow bowl or plate. Cut green
onions into 2" sections, slice ginger root and scatter both on
top of the scallops.

Steam scallops for 5-7 min over high heat. Remove and discard
the onions and ginger, drain scallops of exess water.

Heat oil until smoking. remove from heat and add garlic. Stir
fry garlic until slightly brown, add the soy sauce and pour
the mixture over the scallops. Serve.
