Somebody dirty rotten little kid stole the duck!

Neekha suspects it's the little sugar junkie from next door. We didn't
know this ahead of time but he is hyperactive and ADD and not allowed
ANY sweets at all. Consequently he absolutely craves them and has to be
closely policed. According to Neekha he grabbed and ate EIGHT of the
small handout lootbags, had two helpings of cake and ice cream, three
glasses of fruit punch, stole a cola out of the fridge, dipped into my
stash of Halloween candy reserved for the next night AND stole Roslind's
super expensive raspberry truffles which were a gift from her son. No
wonder he was acting so weird. Neekha speculates that because the duck
was dark brown from dehydrating, it that he ate it too thinking it might
be chocolate!

     Title: Zubatka V Kvashenoyo Kapustye - Catfish In Sauerkraut

  Servings: 4

  1 1/2 lb Catfish fillets
      5 c  Sauerkraut
      4 ea Bacon slices cut to
      1    "squares
    1/2 c  Onions minced
      3 tb Shortening
      2 c  Green Bell peppers sliced to
    1/4    "rings
      1 ea Tomato peeled & chopped
      1 tb Hungarian paprika hot or
    sweet
    Pepper to taste
      6 tb Flour
    1/2 ea Bunch fresh dill chopped
  1 1/4 c  Sour cream
    Garnish-
      3 tb Sour cream
    Sweet Hungarian paprika
      2 tb Butter melted

NOTE: Any firm fleshed fish such as snapper, grouper, cod, etc. may be
used.

Rinse & drain sauerkraut to remove bitterness. Heat a large skillet &
fry bacon bits until translucent. Add onion, 2 tb shortening, green
pepper, tomato & 1 tb paprika. Stir mixture well then add sauerkraut &
black pepper. Simmer for 1 hr. stir sometimes. Make a light roux using 1
tb shortening, flour & dill. After 1hr. of braising add roux to
sauerkraut mixture. Place fish on top of sauerkraut. Cover then simmer
for 15-20 mins. Remove fillets from pan. Stir in sour cream & heat.
Serve by placing a portion of creamed sauerkraut mixture on plate the
top with a fish fillet. Garnish with dollops of sour cream mixed with
melted butter & a dash of paprika.
