      Title: Fudge A La Pauline

      Yield: 64 Pieces
 
     21 oz Sugar
      1 tb Cocoa powder, unsweetened
      1 cn Evaporated milk, 12-ounces
      4 oz Butter, unsalted, 1 stick,
           -plus more for the pan
    1/2 c  Corn syrup, light
      1 ts Vanilla extract
      1 pn Salt, kosher
      4 oz Pecans, chopped
 
  Butter an 8-inch-square metal pan.
  
  In a 4-quart saucepan, whisk together the sugar and cocoa powder until
  well combined, with no lumps of cocoa.  Add the evaporated milk,
  butter, and corn syrup.  Place over medium heat and bring to 232
  degrees, scraping down the sides of the pan and stirring occasionally
  with a wooden spoon. This should take 30 to 35 minutes.
  
  Remove from the heat and add the vanilla, salt, and pecans.  Beat
  with the wooden spoon until the mixture is spreadable and is no
  longer shiny, 7 to 8 minutes.  Spread the fudge into the prepared pan
  and let the fudge cool completely at room temperature until set.  Cut
  into 1-inch pieces and store in an airtight container for up to 1
  week.

      Title: Red Beans, Rice, And File

      1 lb Beans, red kidney, Camellia*
      1 qt Water, plus extra for
           -soaking
      1 ea Onion, yellow, large,
           -chopped
      3 tb Garlic powder
      1 tb Pepper, black, fresh ground
      1 tb Filé powder**
      1 tb Salt, kosher
      3 c  Rice, white, cooked, hot,
           -to 4 cups
 
  Cover the beans with water and soak overnight.
  
  Drain the beans and discard the soaking water.  In a 3 1/2 to 4-quart
  saucepan, combine the beans, onion, garlic powder, pepper, filé, and
  salt. Add the water.  If this does not completely cover the beans,
  add enough to do so.  Cover and place over medium heat.  Bring to a
  simmer, then lower the heat to maintain a simmer. Cook, stirring
  every 15 to 30 minutes, for 1 1/2 hours.  Reduce the heat to low and
  continue to cook for another 30 minutes.  The beans should be tender
  and beginning to fall apart. Serve over rice.
