     Title: A-Train's Kale And Sausage Soup

  Servings: 2

      1    onion
      3    links hot Italian sausage
      2 c  chicken stock
      1 c  white wine
      1 cn red beans (or any other that
           appeal to you)
      1 lg bunch kale, washed and
           roughly chopped
      2 pn rosemary
      2 pn thyme
           salt and pepper to taste

Eat Your Vegetables. And Pork, too.

You might think from reading Grocery Guy that Tom and I lead a life
of unrelenting hedonism. To a certain extent you're right - we drink
a lot of wine, eat a lot of great food and throw a lot of parties.
But even a couple of degenerates like us need to give their livers a
break once in while. Tom doesn't drink during the month of January,
which is something of a Diner/Marlow tradition and I've taken a vow
to eat more vegetables on a daily basis. Which is basically a
commitment to going to the grocery store more than once a week
instead of relying on the Chinese takeout menu for dinner.

Since we're ridiculously co-dependent, that means I won't drink much
either and we'll both end up packing in the green fiber. Hence, this
simple soup. Don't worry, it still has sausage in it, for that
authentic Grocery Guy flavor.

If you bought link sausage squeeze the meat out of the casings into
a heavy-bottomed pot, over medium heat. If you bought loose sausage
just throw it on in there. While the meat browns, dice the onion and
add to pot along with rosemary and thyme. When all sausage is well
browned use the wine (or stock if not using wine) to get all the
browned bits off the bottom of the pot. Throw in the kale and put
the lid on to steam for 5 minutes or so. Take off lid, add the beans
and their liquid, the chicken broth and enough water to cover the
kale, sausage, bean mixture. Add salt and pepper to taste and simmer
on medium for about 25 minutes. You need to cook it that long for
the kale (which will fade and become sort of unsavory looking) to
become tender and for all the flavors to mingle. Serve with a little
parmiggiano on top and with crusty bread, if you're into carbs.

Also, the sausage I got was pretty hot which gave the soup a nice
mild heat. If your sausage isn't hot enough or you just like the
spice, add a little crushed red pepper along with the other herbs.

Hearty but not heavy, this soup has a hint of spiciness and the wine
gives the broth some nice complexity and depth. It's perfect for a
chilly January dinner, even when it's raining, not snowing outside.
