Hmm, that's a thought.  Carol's really not that far away from us and those who
live in the "lower" Northeast could probably make it there easily if they had
to drive.  Flying is out of the question for me anymore; I can't physically
handle the flying because my ears don't adjust for pressure properly and I
can't take medication for it...

It would be fun if you could attend, but going that many miles and an
"international" trip would be costly...which is something I don't think any of
us can afford!

I've toyed around with the idea of hosting a picnic here.  I've got a full
half-acre of land in the back that would be nice to have an outdoor picnic (I'd
have to get a screen tent or something for shade though.  I do have enough room
in my dining room to set up a few folding tables for dishes and the like. There
are plenty of hotels (good ones, like Red Roof Inn, Quality Inn, Best Western,
Days Inn, Holiday Inn, less than a ten minute drive away).

In June, we have the world's largest rhododendron garden (on Roan Mountain)
festival...plus this is a very historical area.  Did you know that settlers in
this area declared independance from Britain long before there was ever a
Continental Congress?  Andrew Jackson and Daniel Boone were both from here
(IIRC) and the entire state of Tennessee was carved from the county I now live
in, Washington County.

As for food, well, there's a ton of BBQ places here (I really don't know much
about the foodstuffs here)...I know there's a killer rib place or two...but not
much in the way of seafood here in Johnson City, but in Kingsport, about 20-30
minutes north, there's a lot of good seafood places.

Now that I really think about it, with my current job, it wouldn't be much
effort to get a Friday and a Monday off and invite y'all to come over. However,
it probably wouldn't happen this year, but maybe there might be interest in a
fall picnic?

MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Breakfast Fruit Chimichangas
 Categories: Mexican, Cheese
      Yield: 6 Servings

           Apricot Basting Sauce
      8 oz Cream Cheese Softened
    1/2 c  Ricotta Cheese
    1/4 c  Sugar
      1 ts Orange Peel, Grated
      6    Flour Tortillas *
    1/4 c  Apricot Preserves
      1 lg Egg, Beaten
      2 tb Butter, Softened
      1 c  Apricots, Sliced

  *   Flour Tortillas should be 8-inches in diameter and be warm.

  ~-- Prepare apricot basting sauce; set aside.  Heat oven to 500
  degrees F. Mix cream cheese, ricotta cheese, sugar, and orange peel
  thoroughly. Spoon about 1/4 cup of the mixture into the center of
  each tortilla; top with 1 Tbls of preserves.  Fold one end of the
  tortilla up about 1-inch over mixture; fold in the right and left
  sides over the folded end and then fold the remaining side to overlap
  the others. Brush the edges with egg to seal. Brush each with
  margarine. Place seam sides down on an ungreased jelly roll pan, 15
  1/2 X 10 1/2 X 1-inch. Bake until chimichangas begin to brown and the
  filling is hot, 8 to 10 minutes. Serve with apricots and Apricot
  Basting Sauce.
