Exactly.. so neat when you come upon some old family bit of 'history' like all
of this.. and it was just so funny, because Mom had always said to me  in the
kitchen that Grandma Florence 'used a lot of Mint'.. but it just didn't
register until she added that weekend in Scranton, that Dad had convinced her
so early on to "go sicilian" with her cooking Lol

I kind of remember seeing packages of Mint for sale at Wegman's a while back..
It's been crazy the last few times we've gone food shopping, so I haven't been
able to check for it, but I'll try to remember next time (g)..

Yep Lol.. he did.. he said he like the idea of growing mint for things like
cold drinks and tea, etc. so he'd grabbed a few trays of mints :)

They are incredibly funny to have around.. each with their own personality as
you can imagine :)

They are already neutered.. the shelter in Ithaca has that done when they
become "residents".. so no worries about adding to the population of unwanted
kitties. I thought that was incredibly neat since it would have been quite an
expense getting all 4 neutered :(  The Shelter called me Sunday as well, just
to see how they were all doing ... I thought that was so neat.. I guess they
check up on the adoptive parents after an adoption in case people don't realize
what they've 'brought home' haha.. Well, the lady was really glad to hear that
all four kitties were doing fine, and even getting along fine with the dogs
over here :)

===Spinach Ricotta Pie===
16 servings, as a main dish

Filling:
1 10 ounce package of frozen chopped spinach, cooked 1 pound ricotta cheese(two
cups)
1/4 pound prosciutto, cappicola or  ham 6 mushrooms, chopped
a pinch nutmeg
1 medium onion, chopped
1/2 cup shredded provolone, or sliced provolone and 1/2 cup grated locatelli
romano cheese
1/2 teaspoon parsley flakes
dash of salt and pepper
1 egg,  beaten

Prepare an unbaked double pie crust (see other cheese cakes, or Delicious pie
crust). Drain spinach, and press out as much water as you can. In large bowl,
combine ricotta, spinach, mushrooms, cheeses, onion, parsley, salt, and pepper.
 Stir in the egg. Cut the ball of pie dough in two.  Roll out one half of the
dough and line a 9 inch pie pan.  Pour filling into the pie crust and spread
with a spatula or spoon. Roll out the second ball of dough for the pie top. 
Place on top of pie, and flute the edges or use the tines of a fork to seal the
edges. Bake at 400F for 30 minutes.
