Having flown on Qantas a couple of weeks ago, I was reminded how much
better it is than Jet* and Tiger.  Early in the New Year I will be

What long-haul airmail? I thought that was Qantas, Australia to UK
with Sunderlands and to USA with Constellations. In those days no one
in USA had even heard of any country as far away as Australia, so what
did they think was long-haul?

Didn't the flying boats have lie-flat beds?  Singapore Airlines also
had them more recently.

My inward postings have been rather erratic recently, with some days
nothing, and then some duplications.  My uploads have been geared to
those downloads.
 
In honour of the festive season Kevin has made a plum pud which he is
bringing here today so that he has an excuse to pour some of my OP
Bundy over it to flambe.  (As if he ever needed an excuse!)  The
excellent Myers's will be kept for the ice cream.

MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: FILLET BEEF WITH WINE FUMET
 Categories: Beef, Sauces, Kevin
      Yield: 2 Servings
 
      2    Beef- scotch fillet
           ;well marbled
      1    Garlic cloves
           ;chopped
           Butter
           Brandy
      4 md Mushroom- Swiss brown
           ; WINE FUMET
           Pan drippings
      1 c  Wine- red
      1 tb Butter
           Salt
           Spice- black pepper
           ;freshly ground
 
  Spread the garlic on one side of each slice of beef.
  
  Heat the butter in a frypan and brown the meat on both sides. Warm the
  brandy in a small saucepan and light with a match. Pour flaming
  brandy over the steaks. Shake pan until the flames die down. Spoon
  the juices over the meat. Add the mushrooms and cover. Simmer for 10
  minutes, turning the mushrooms after 5 minutes and basting more
  liquid over the steaks.
  
  For the fumet: After removing the meat, add wine to the pan and
  return to a medium heat, scraping up any juices. Add butter and
  seasoning, stir until piping hot and slightly reduced.
  
  To serve: Arrange the meat on plates and pour around the fumet sauce.
  Serve with steamed vegetables, garnished with fresh parsley.
