Solitary comes tomorrow - they are finally moving me to
the CCU.

Not without drugs. The squeaky wheel.

Plavix would probably kill me in the 1-year regimen.
We've compromised with 1 month, the minimum allowed
by the protocol.

Today they offered this fourth choice:

Grilled Tilapia w/ Chipotle Peach Salsa - a tasty
white fish fire-grilled, and served with a peach
and pepper chipotle sauce.

I asked for this with "no sauce please - if not
possible, then grilled hamburger without roll x2"

What came: two 5-oz servings of not bad if overcooked
fish, no sauce. Very fine, as I am NPO as of midnight.


Sriracha-Soy Fried Chicken in Lettuce Leaves

servings: 6

Recipe by Stuart Brioza

Sauce
2 Tb sriracha sauce
2 Tb soy sauce
2 Tb fresh lime juice
Chicken
1/2 c minced green onions
3 Tb soy sauce
2 Tb sriracha sauce
2 ts sugar
2 ts finely grated peeled fresh ginger
2 garlic cloves, finely grated
1 lb skinless boneless chicken thighs, 1" cubes
Garnishes
12 lg crisp romaine leaves
6 red radishes, trimmed, thinly sliced
1/2 c (loosely packed) fresh mint leaves
1/2 c (loosely packed) fresh cilantro leaves
1 c potato starch
Peanut oil or rice bran oil (for frying)

Sauce. Whisk all ingredients in small bowl.

Chicken. Whisk first 6 ingredients in medium bowl.
Add chicken; toss to coat. Cover and chill 4-24 hr.

Garnishes. Arrange lettuce leaves, radishes, and herbs
in separate piles on platter, leaving room for chicken
and sauce.

Place potato starch in another medium bowl. Working in
batches, add chicken pieces to potato starch and toss
to coat. Shake off excess potato starch and transfer
to baking sheet. Pour enough oil into heavy deep saucepan
to reach depth of 2". Attach deep-fry thermometer to side
of pan. Heat oil to 350F. Working in 2 batches, fry
chicken until cooked through, stirring often to separate
chicken pieces, about 4 min. Transfer chicken to paper
towels to drain.

Place chicken and sauce on platter with garnishes. Serve,
allowing guests to fill lettuce leaves with chicken,
radishes, herbs, and sauce.
