My personal guide to ordering Thai food. It's for anyone who's ever
felt lost looking at a Thai menu

Don't be offended if your server appears unfriendly. The demeanor is
part of the culture. At my first Canadian dinner, our server beamed,
introduced herself, and asked about our well-being before going on
about the night's specials. I was stunned. Back home, conversations
with servers are rare and smiles are occasional treats. The wait
staff is in a restaurant to serve food, period.

Food is designed to be shared. The idea of ordering my own meal when
I sat at a table with four people surprised me. In Thailand, ordering
is a group effort, although the eldest diner gets the most say.

Four words are the key to ordering. I like to call it the "wet, dry,
yum, spicy" rule.

There should always be a "wet" dish, like a soup or a curry. Curries
are generally rich, while soups are light and brothy, so the wet
dish can vary per your mood.

For contrast, at least one dish should be "dry." That includes
stir-fries or anything that is not served in a bowl. The
descriptions of the dishes generally include the prefix pad, meaning
stir-fry. Deep-fried or steamed dishes also fall in this category.

A yum, or salad, is often in the mix. The word "yum" dictates a
dressing made of the standard quartet of fish sauce, lime juice,
sugar and chiles. Light and acidic, a yum dish acts as a palate
cleanser between bites.

At least one dish should be spicy, but mild dishes help balance the
meal and give your tongue a break. We also like to diversify by
having both meat and seafood dishes on the table, matched with
vegetable-heavy choices.

Think of rice as the canvas on which to paint each bite. All dishes
are eaten with rice. Yes, soups and salads, too - hence the fork and
spoon. The back of the fork pushes everything onto the spoon, which
securely holds rice and its accompaniment without any sauce or soup
leaking.

Eat everything at the same time. In Thailand there are no courses;
soup, salad, dips, a whole fish, you name it, generally are eaten
together, with the exception of dessert. However, Thai restaurants
in the United States often serve soup and salad first to match
Western norms.

Noodle dishes are the sandwiches of Thai cuisine. Pad Thai, pad see
ew and noodle soups are what you grab for lunch or for a quick solo
dinner. In the United States, they're on the dinner menus of Thai
restaurants, but that's not their traditional role.

If you're looking for a salt shaker, use prik nam pla. I think of
this Thai condiment of chiles in fish sauce as salt with
personality.

Don't stress. There are always traditions governing the way we eat
no matter what the culture, but at the end of the day, let's face it
- it's just food. Order whatever makes you happy, and pay no mind to
those Thais who might occasionally laugh.
