      Title: Sauteed Chicken Breasts Piemontese

      4    Chicken half-breasts; abt
           - 6 (8 oz ea) boned, skinned
    1/2 c  Flour (for dredging)
           Salt & fresh ground pepper
      6 tb Olive oil
    1/2 lb Mild mushrooms; fine chopped
           - (4 cups)
      1 c  Chicken stock
      1 c  Heavy cream
    2/3 c  Toasted chopped hazelnuts
      1 tb Chopped fresh thyme
           Grated zest of 1 small
           - orange (about 1 tb)
      2 tb Chopped parsley
 
  Because this dish is rich, you may not need a starch
  accompaniment. If you crave one, egg fettuccine will fit.
  I'd suggest a vegetable with some slight acidity, like
  spinach or asparagus.
  
  For even thickness and ease of frying, remove the tenderloins
  from the chicken breasts. Put the chicken breasts between
  sheets of plastic wrap and lightly pound to a uniform 1/3"
  thickness. Dip the chicken in flour that has been well
  seasoned with salt and pepper. Warm 3 tablespoons of the
  olive oil in large skillet over moderate heat. Add the
  chicken and gently saute for 3 to 4 minutes per side, until
  almost cooked through. You want the breasts to be pale gold
  but you don't want them to develop a crust. They must remain
  tender. Remove from pan and transfer to a plate. Cover with
  foil to keep warm.
  
  Add the remaining olive oil to the hot skillet and toss in
  the mushrooms. Cook briskly over moderately high heat for
  about 4 minutes, or until the mushrooms start to give off
  some liquid. Add the stock and simmer for 2 minutes. Add
  the cream, hazelnuts, thyme and orange zest; simmer until thickened.
  Return the chicken to the pan and simmer 2 minutes longer, or until
  cooked through. Taste for salt and adjust.Transfer the chicken to
  plates. If the sauce is too thin, reduce it a bit lo
