There was low overcast over the lake, which made sunrise
atmospheric and dreamy, rather than glorious. Soon the mists
blew off, and it became gorgeous and gradually warmer.

Lunch was chicken thigh cutlets in wine with mushrooms over
angel hair.

Chicken cutlets in wine with mushrooms

servings: 5

chicken fat
1/2 lb mushrooms, sliced
1/2 lg sweet onion, diced small
10 chicken cutlets, 2-3 oz each
s, p
flour
1 c hsiaoshing rice wine
1 c chicken broth reduced to 1/4 c
1 tomato, diced small
dried thyme

Cook mushrooms and onion separately in fat until done.
Combine and set aside.

Season cutlets and dredge in flour. Fry in fat,
turning once, until brown on both sides. Set aside.

Deglaze the pan with rice wine and reduced broth.
Add tomato and cook 1 min. Add mushrooms and onion.
Correct seasoning with thyme and pepper. Add chicken
and toss to coat. Serve over angel hair pasta.

Ah yes, an appetizer of baba ghannouj, which I made using
peanut butter for the tahini. Reduced fat wheat thins, which
were fine except that there were a number of cancerous-looking
seconds mixed in with the rest of the crackers.

At some point I went for a dip in the lake; the water right
by the shore was warm, but there were currents quite close to
the shore that seemed a little chilly.

A new neurosis and an intensification of an old one. I found
this day that when I opened my spider solitaire, some other
program had messed with the default, and it opened almost but
not quite full screen. So I moved one of the window edges and
cut the size by maybe 50%. And got claustrophobia within the
boundaries of the game - my brain sort of seized up until I
moved the edge partway back. Number two. I'd been talking with
Nancy about how we don't care to get our heads wet, and how
my dislike came later in life: when I was a small child I would
go down to the bottom of a pool and see how long I could stay
- really loved that, but gradually I started to feel funnier
about diving and eventually about putting my head in the water.
This day I found (not having swum in a couple years at least) I
really disliked putting my head under water, though I must have
done so, as my hair ended up soaked. It might have been in part
that the water was the color of tea.

Dinner: beef with vegetables made with leftover steak;
eggplant, onions, and tomatoes, seasoned with basil; and
leftover rice.
