The grand finale - scrapple and eggs, and then Gail and Dale
were on their way.

Rapa scrapple done two ways, crispy and extra crispy. I
like extra crispy ("scrapple chips," the way my sister used
to make them). 

Habbersett's scrapple, medium. Though made by Rapa, this is
a quite different product, pepperier and firmer: when Annie
was growing up, her father used to pay a trucker to bring
a load back (not a whole truckload, just fill the nooks and
crannies with it). A most relevant difference is that it does
not use snouts or ears, which means that you can cook it medium,
with the outside nicely crusted and the inside having that
puddingy consistency that some people like.

Rapa also makes Greensboro and Jones, and I believe has been
contracted to make Hatfield as well, giving it a virtual
scrapple monopoly, at least for the supermarket product. I
have posted a recipe for the stuff here, which Clean Dave
has tweaked and improved and put on his Dave's Cupboard blog.
You can also get it at Amish markets and butcher shops.

I also made some eggs, 2 plates sunny side, 2 plates over
easy, one ... well ... I'd looked for a cover for one of
the skillets and not finding one handy used another skillet,
which had a hot bottom, which rested on the eggs that ended
up Dale's and hard-cooked the yolks. I was going to take
these for myself, but in the serving this plate ended up
with English muffins and so went elsewhere. I generally
don't eat starch in the morning except for a croissant on
the airplane if it's free.

Ample OJ, GJ, or (for me) chocolate Silk rounded out the meal.

Now it's time to settle into reality again - two book
projects, a bunch of cooking, taking the cats to the vet
on Friday, and maybe a baseball game or two - Crosscutters
are home (Class A Phillies team, I think), and the Little
League World Series starts up, though I don't have a fish
to fry in this year's competition (you may recall I saw
the Peabody, Mass. team get thrashed a couple years ago
in round 1).
