Ärende: PRESSURE COOKERS 10909
==============================
Hi Dave,

RH> Quick and easy; did you use the red or green peppers?

 DS> I use whatever the supermarket has on markdown. [g] Sometimes they're
 DS> red and sometimes green.

I snagged some yellow and green bells (plus assorted hot peppers) for a
couple of dollars, maybe 3, at the farmer's market last Saturday. Our
favorite produce lady had a "fill the basket (pint size) for $1.00"
deal. Steve got some red savinas and jalapenos in the same purchase that
he used to make hot sauce that night.

I don't really plan my meals ahead past the
 DS> point of, "We;; I've got three pounds of hamburger here." The actual
 DS> menu will depend on what's on sale or marked for clearance.

I'm (somewhat) more planned than that. Some days, not much. (G)

DS> I've never tried processing pumpkin in one, though. Gonna give it a
DS> try now that you've mentioned it.

RH> We've done it for years that way--so long, I can't remember how we did
RH> it before. I do have memories of my mom trying to peel one one year and
RH> the skin being so tough, Dad taking a power sander to it. She should
RH> have put it in the pressure cooker;

 DS> I usually process pumpkin in the oven - split it in half, scoop out
 DS> the seeds, then cut side down on a baking sheet. Roast until the skin
 DS> is slightly brown, and the pulp just falls out.

It falls out doing it in the pressure cooker too. It's more watery tho;
I let it drain a bit before packing into freezer boxes. After thawing, I
let it drain more.

 DS> Been awhile since I made pumpkin pulp from scratch, though. I usually
 DS> buy it canned from One-Pie (good quality, made in Maine, and my mom
 DS> used to buy it,)

My mom used whatever was on sale if she didn't have the fresh pumpkin.
More often it was the canned, usually A&P or Victory/Great American
brands. I don't like pumpkin pie so I'm not a good one to critique
quality.

OTOH, my nephew that is getting married on Sunday loves my pumpkin pie.
He's getting from us: a pie plate, rolling pin, can of pumpkin, recipe
for pumpkin pie, card & check.

DS> Do you use pressure to can your tomatoes and peaches? We just use a
DS> boiling water bath (

RH> I pressure can since it's not that much more to it. I don't have a
RH> proper boiling water bath pot so use my pressure cooker for
RH> smaller size jars and my 12 qt stock pot for taller ones.

 DS> Well, I'm going to sound like a hoarder again, but I have at least two
 DS> or three of those big blue enameled water baths. I can't help it
 DS> because eventually something knocks chips in the enameling, and then
 DS> they start to rust and I use them for garden waste or washing walnuts

I'm going to check out my mom's (have told my brother I want it; it's in
the cellar) and see if it's any good. If it is, I'll probably grab it
next time we're up there.

 DS> or something. That's another item I never pay full price for - canning
 DS> kettles are
 DS> wicked common up here and I find them all the time at estate sales and
 DS> church rummage sales for a couple of dollars.

I've seen them at Ace Hardware and Wal-Mart but not at yard sales.
Around campus, yard sales tend to have lots of baby/young child stuff
and text books. Off campus, I've not seen any kettles around here.
Probably if we headed up into the country, further away from Raleigh, I
might find one. Got the rack on close out a couple of years ago.

---
Catch you later,
Ruth
