If you "save up your sins" an occasional trip to Long John's or some other
equally hard on the blood glucose venue won't kill you.

SD> Once I have a little more cash, I'd like to try something from their

I wouldn't go to LJS for anything much except the tempura fish/shrimp/chicken
strips. I have both a George and a DeLonghi Indoor Grill so it's easy enough to
do grilled or Georged stuff at home. Battered and deep fried - whilst do-able
is just too big a PITA for just me. Easier to visit a Long John's.

SD> Good root beer is always bad for a diabetic. :) I've always liked IBC
SD> root beer in the brown bottles and homemade root beer even better on
SD> the very rare times I've had it.

I commend you to Diet A&W - it's the best, hands down, diet root beer ever. And
it's better from the tap than from a can ... like at LJS/A&W. Bv)=

DD> The Maid-Rite in Springfield, IL is the oldest drive through in the
DD> US. And is in the National Register of Historic Places. They make
DD> their own root beer and it is most excellent.

 SD> I've heard of the Maid-Rite.

It's a neat old place. It is two blocks from where I attended high school. If I
didn't care for the mystery meat of the day I'd skin out and go get two Maid
Rites and a root beer for lunch.

SD> Since we're speaking of fast food, I sorely miss Steak 'N' Shake.
SD> There are none in Tennessee, I think. The next time Maura and I go
SD> down to Atlanta we'll stop at one in Kennesaw. I miss having a
SD> steakburger with an orange shake (definitely -not- diabetic-friendly
SD> but a very rare treat). I also love their thin shoestring fries with
SD> the cheese sauce or the "three-way" chili.

I OTOH abhor those skinny fries - I do like the chilli-mac and the chilli-5
ways. And around here the chilli is pretty good, too. That is not always the
case at all stores. Our local S&S stores are franchise owned - one of the few
such arrangements that S&S allows. But, the local guys invested early with Gus
Belt when he was starting out and are grandfathered in. As such, they run their
own commissary rather than depend on the national supply chain. Bv)=

I have eaten at the #1 Steak & Shake in Normal, IL. The building was sold to
Monical's Pizza and does not exist as a burger joint any longer.

MMMMM----- Recipe via Meal-Master (tm) v8.06

Title: Smitty's Famous Lawson's Tavern Chilli
Categories: Chilli, Stews, Beef, Chilies, Dips
      Yield: 2 Cups

  4 1/2 lb Ground suet
4 lb Coarse ground beef *
  4 1/2 oz (3/4 c) Spicecraft chilli
           - powder blend **
2 tb Salt (can always add more)
    3/4 tb Garlic powder
      1 ts Ground oregano
      2 ts Red (cayenne) pepper
      3 ts Ground cumin
           Beans ***

  * This is sometimes called chilli chuck. Hamburger does not
work very well; it tends to get too crisp.

  ** Currently marketed as Baron's #5640 (a good all-around
  dark chilli mix)

Use a 9 to 10 qt iron kettle. Render the suet first. Put in
a cup of water to get it started to melt and prevent
sticking. Keep it boiling and stir constantly. When mixture
stops foaming, skim off all foam. Continue cooking until
suet looks like oil. Cracklings can be left in, if desired.
If they taste strong, they should be omitted. Let oil cool
until meat does not splatter when added.

Add meat, breaking up with a potato masher or large spoon,
while cooking. Always stir constantly. Cook until
medium-well done, but not crisp. Mix the powdered
ingredients and add them a few minutes before meat is done.
Keep stirring. Don’t let it stick to the bottom of the
  kettle.

*** BEANS: Beans, which are very important, are cooked
separately from the meat. Small red beans (although hard to
find) are best to use. Don’t use kidney beans, if possible.
Brooks hot chili beans are the next best choice.

Cooked beans are better if prepared at least 24 hours prior
to serving. They will provide their own juice during
  cooking.

SERVING: Place heated beans in bowl first. Top with 3 to 4
tablespoons of chilli meat. Let the consumer do the mixing.
  Serve with crackers, etc.

STORING CHILLI MEAT: Strain meat from oil; pour oil into
small cake pans. Divide meat mixture into cake pans. Let
cool until solid. Place pans in refrigerator or freezer for
a few hours or a day. They can be removed easily by heating
in a little hot water or moving pan over hot flame.

Remove bricks from pans; seal tightly with butcher paper or
plastic wrap. Do not use aluminum foil or leave in pan, as
  spices can eat through aluminum.

These bricks can be stored in refrigerator for a couple of
weeks or for a year in a freezer (if well wrapped). Slice
off only the amount of brick you want to use; re-wrap and
  refrigerate.

Note: This chilli meat makes super Coney Island hot dogs.
