=============================
-=> Quoting Michael Loo to Glen Jamieson <=-

GJ> One distinct difference being that the Austrians usually stay abroad,
GJ> in Germany, California, Australia, etc, while the citizens of that
GJ> other country to which I think you refer tend to return home after
GJ> informing the ignorant and deprived peoples of lesser countries about
GJ> the delights to be experienced in their Antipodean paradise.

ML> And with the vast influx onto your shores, is there now
ML> a housing shortage and a huge population glut?

While the Australian $ is still strong many Australians are enjoying
holidays in poorer countries, such as Europe, America and Asia, but
unfortunately our own holiday destinations are largely empty, as apart
from Japanese and Chinese, few foreigners can afford to visit here.

GJ> The German had just finished building and painting a beautiful work
GJ> boat, and was hoping to earn some money with it, taking tourists for
 GJ> cruises or similar.
ML> My beautiful fingers were designed to play string quartets,
ML> but they ended up in show pits and behind prancing variety
ML> show entertainers, what of it.

My heart bleeds for you!

GJ> fuel there was available, so I hired that lovely boat, filling it up
GJ> with dozens and dozens of greasy 44 gallon drums of petrol

ML> I suppose the almighty dollar made him look the other way
ML> for a while. Nothing that a bit of ammonia and effort can't
ML> fix, although I hope that word didn't get around that the
ML> boat had become just another dirty tramp. What became of
 ML> him and his vessel?

He found that it was 50 cm too long to fit the cheap classification
that he wanted to use it for, so he got his oxy kit and cut off the
extreme point of the bow, replacing it with a flat plate, which rather
spoilt the appearance of the boat. Later, Maxi, my Viennese lady
critic used that boat to qualify for her coastal skipper's
certificate, taking it along the coast and up rivers. As she was
always elegantly dressed and made up, with a well-trained all-native
crew, she was rather well-know around PNG, and even did some trips to
North Queensland to pick up cargoes of explosives. I think Karl, the
German, sold that boat and moved on.

GJ> I noticed that the Viennese took themselves seriously and did not
 GJ> smile much.
ML> They smile plenty, but the smile is so insincere.

I didn't get many smiles, but then I had little to give them.

ML> Re racism there, I have just watched the televised 2012
GJ> New Year's Concert by the Vienna Philharmonic, playing mainly works by
GJ> members of the Strauá family, but very well done. The Vienna Boys'
GJ> Choir also took part, and to my surprise included some definitely
 GJ> non-Caucasian lads.

ML> Progress happens, slowly. That doesn't gainsay that there is
ML> and probably will always be racism, institutional or individual.

At least some people there are moving towards multiculturalism. BTW,
Maxi's husband, Reiner, had been in the Vienna Boys' Choir in his
youth - until his voice broke and he immediately and unceremoniously
lost that job.

ML> Another fairly recent innovation was the
GJ> inclusion in the orchestra of a Woman!

ML> Gasp. In the European orchestras, that particular chair has
ML> long been the nod to femininity; in the big once all-male
ML> establishments the battle had been fought between 60 and 100
ML> years ago, as I recall. Now Germanic orchestras with women in
ML> other chairs - that is more recent but still probably 20 years
ML> ago, with Sabine Meyer in the vanguard, propelled by her "mentor"
 ML> von Karajan.

I noticed that the TV cameras hardly ever showed the lady's face, but
concentrated on her hands plucking away. She was quite attractive.
The conductor on that occasion was Marvis Jansons.

MMMMM----- Recipe via Meal-Master (tm) v8.05

      Title: Wiener Schnitzel
Categories: Cia, Ffbb, Main dishes, Meats
      Yield: 10 Servings

3 1/2 lb Veal top round
    1/2 ts Salt, to taste
    1/4 ts Pepper, to taste
      4 oz Flour, as needed
      4 ea Eggs, whole
      4 fl Milk
     12 oz Breadcrumbs
3 oz Vegetable oil, as needed, to
           -4 ounces
      3 oz Whole butter
10 ea Lemon wedges or slices
     10 ea Parsley sprigs

  1. Cut the veal into cutlets of about 5 to 6 ounces (140 to 170
grams). Pound them to an even thickness. Season well with salt and
  pepper.

  2. Bread the veal cutlets: Dredge in flour, dip in egg wash (made by
blending eggs and milk), and coat in bread crumbs. Refrigerate the
  cutlets until firm.

  3. Panfry the cutlets in the hot oil until golden brown on both
sides and cooked through. Shake the pan occasionally to keep the
  cutlets moving.

  4. Heat the butter in a separate pan until hot and foamy.

  5. Serve the cutlet topped with foaming butter and garnished with a
  lemon wedge and parsley.

Note: The butter and veal must be extremely hot. In fact the butter
should still be bubbly when the dish is presented to the guest.
Rolled anchovies are another classic garnish for this dish.

Variation: Holstein Schnitzel: Top the Wiener Schnitzel with a
  soft-cooked fried egg.
