I had the chance to taste Benefiber (wheat dextrin) the other
day - it had a very faint chemically taste that went away when
it was dissolved in just about anything. Also, its gumminess
went away miraculously in a surprisingly small amount of other
liquid.

Are you a man or a mouse? Squeak up! (I have had two girlfriends
use this witticism on me. Might say something about me.)

There is a turning point. I don't think the North American
audience will happily buy 3-4 oz of animal protein if it's
fanned out nicely and looks like twice what it is.

Not that I'd turn away this dish (it looks pretty good),
but I appreciate this particular little irony. The Chinese
don't have hot Italian peppers - or at least didn't until
recently - and would use dried santaka-type chiles in this
kind of setting.

Watermelon Cooler 
cat: booze
servings: 4

1/2 sm watermelon
8 oz simple syrup
4 oz fresh lemon juice
4 oz fresh lime juice
Ice
12 oz dark rum
8 oz vanilla liqueur
12 mint leaves

To prepare the watermelon, cut off the rind and discard.
Cut the flesh into 1" cubes (you should have 4 c) and
place them in a colander set inside a bowl. Stir the
cubes gently to extract as much juice as possible
without breaking up the cubes. You should have at
least 8 oz of juice. Put the watermelon cubes in a
plastic bag and freeze for at least 30 min.

Mix the syrup, lemon juice and lime juice with the
watermelon juice. To serve, divide the frozen cubes
among four glasses. Divide the rum, vanilla liqueur,
and juice mixture among the glasses and stir. Add ice
cubes if desired. Garnish with mint leaves.
