I know how that works - when I enlisted in 1959 I wanted to be a Photographer's
Mate and go to boot camp in Sandy Eggo, then A-school in Jax. So, I took the
aptitude tests and got bunged into Aviation Electronics and an A-school at NAS
Memphis (Millington). Much faster rate than Photographer. Sewed on my crow as
soon as the required time had elapsed and was a slick-arm AT-2 when I was

You de-fat your soup? Whatever for? The only change I would make from the
ingredients list is I'd probably use a 2# bag of frozen mixed veggies and a
couple TB of Minor's pork base mixed with some water. Or a can of chicken
broth.

      Title: Fat Man's Potato Soup
 Categories: Soups, Potatoes, Dairy, Cheese, Poultry
      Yield: 6 servings

      5 c  Whole milk
      1 c  Heavy cream
      1 tb Minor's chicken base
           +=MIXED WITH=+
      2 c  Hot water
      3 lg (to 4 lg) white potatoes
      1 lg (to 2 lg)leeks; chopped fine
    1/4 lb Butter
      1 c  Muenster cheese; grated
           Salt & pepper
                 
MMMMM------------------------GARNISHES------------------------------
           Chopped chives/green onions
           Crisp fried bacon; crumbled
 
  In a medium saucepan, heat the milk and cream, then stir
  in the soup base broth. Peel potatoes and grate directly
  into the milk. Keep the temperature of the broth low, as
  it will boil over easily. Stir in the leek, whisking to
  incorporate and thicken. 

  Once the mixture is nicely thickened, stir in the butter.
  Then, with the temperature still low, add the cheese,
  stirring until it melts. 

  Season with salt and pepper to taste. Ladle into bowls,
  top with chives/green onion and/or crisp bacon bits,
  and serve immediately.
