You will have read the MLoo reply to that - which made really good sense. Some
of my favourite food spots have been "kitchen-bossed" by Mom, Grandma, Pop or
Grandpa. And when that person packed it in - the food suffered as did the
bottom line. Some of the places recovered, many did not.

One of my favourite stops in Detroit was a smallish place on Michigan Ave
called "Little Warsaw". I stopped there the first time because I was not in the
mood for Coney Island or White Castle or pizza. At the time about all I knew
about Polish food was that Polish sausage was really kielbasa and that it was
often served with kraut. Grandma ran the kitchen as spoke *very* little
English, son ran the front of the house, and grandkids and their friends were
the wait staff, bussers, dish washers, etc. Daughter-in-law took care of the
till. Detroit doesn't/didn't have as large a Polish community as Chicago (more
Poles there than Warsaw) but there was an enclave around Hamtramck (20 or so
miles away) many of whom made the trek to the shadow of Tiger Stadium (beisbol
park). I heard as much Polish as English spoken in that cafe ... and got an
education in Polish grub.

      Title: Kapusta Z Jablkamy
 Categories: Vegetables, Fruits, Pork
      Yield: 6 Servings

      1 md Head of cabbage
      1 tb Salt
      3    Or 4 green apples
      2 md Tomatoes; opt
      1 ts Sugar
      1 tb Butter
           +=OR=+
      3 sl Crisp bacon
      2 md Sliced onions

  Shred cabbage. Cover cabbage and onion with boiling water.
  Let stand 10 minutes. Place butter or broken bacon slices
  in the bottom of a kettle. Add drained cabbage with onion,
  apples and tomatoes.

  Remove seeds from tomatoes first. Seeds will give a bitter
  taste to the cabbage. Add sugar and simmer until tender,
  about 20 minutes. Salt while cooking.
