=======================
Hi Michael,

RH> Probably, if you tend to rebel against the way you were brought up
RH> (regarding eating), you would cook your eggs differently than the way
 RH> your mom did.

ML> I rebel against my upbringing regarding pretty much everything
 ML> but eating!

OTOH, eating is probably the biggest way I rebel against my upbringing.
(G)

ML> If, on the other hand, your mom was a good, creative
RH> cook and you liked what she cooked, you might not be a rebel & cook the
RH> way she did. Steve and I do not eat the way we (me, more so) brought up
RH> and enjoy a wider variety of foods. I cook my eggs basically completly
RH> opposite of how my mom did.

ML> On the whole, my cooking methods are very like my mother's,
ML> sometimes altered by experience with (eating the products of and
ML> working with) my sister and other knowledgeable persons. There

I started out cooking like my mom but went far beyond it in a short
time. My mom does not have a wok, ice cream maker, and countless other
kitchen small appliances & tools I find very useful. She has 2 cutting
boards, a wooden one she's had for years and a plastic one we bought her
last year. Her knowledge of cooking would fill maybe a teaspoon whereas
mine would overflow probably at least a 4 cup, if not larger, measure.
But, she and Dad are happy the way they cook/eat and I like the way
Steve & I cook/eat.

ML> are a few big deviations: I cook almost all proteins much rarer
ML> than she did (she thought a tinge of pink in the middle of a piece
ML> of beef was "rare" and somehow racy and dangerous). But with no
ML> recipe used for any of these, my bolognese sauce or cabbage and
ML> meat (a simpler version of mu shu ro) or beef stew would be pretty
ML> much identical to what she made fifty years ago.

My parents like shoe leather steak too. (G) Her beef stew is very basic;
just meat, potatoes, & carrots seasoned with salt & pepper. She makes a
thin gravy and serves it over white bread on a plate. I add celery,
onions, mushrooms, rosemary, tomatoes and tomato sauce. My gravy is
thick; I serve the stew in bowls with usually something like whole wheat
biscuits on the side.

RH> adults. Google Veggie Tales and Big Idea Productions. The line I quoted
RH> above came from the "King George and the Ducky" show, the short before
 RH> the story.

ML> I discovered that Wikipedia has a whole treatment of the episode.
ML> Interesting. I certainly endorse the ethics that are espoused.

And you know where we stand on the ethics side. We've got that and 14
other VT DVDs on the shelf.

ML> leach straightaway into the water.
RH> We steam them, eat them raw or or wilted.
ML> Can you steam them in a grid over your boiling pasta
ML> water, saving energy without soaking the veggies in
 ML> lots of water?
RH> It would make stirring the pasta a bit trickier. (G)

ML> Not really, remove the grid and stir, then replace the grid.

True, just have to make sure you use pot holders as the metal gets hot.

ML> Steaming of greens anyway is one of those methods where
ML> uninterrupted cooking is usually not necessary.

And it is so easy to do, easiest way to fix greens.

RH> we went to the Seoul Garden. I usually try the beef bulgogi first; itf
RH> that's not good, then I don't think the place is good over all. Here it
RH> was very tender, almost falling apart.

ML> Sometimes I favor the very thin, very marinated bulgogi,
ML> sometimes the chewier kind that's more like the texture
ML> of kalbi. Depends on the state of my jaws, perhaps.

The Korean place in Mililani had tougher beef. I liked the thinner one
like I had the other night; my jaw doesn't like meat that's too toough.

ML> Chef Knox's chocolate truffle cake
 ML> cat: dessert
 ML> servings: 8 to 10

Looks good, but then, too, when does chocolate not look good? (G)
