That shows imagination and originality.  I could imagine myself doing
things like that, to see how they turned out, and I am not loony!

Lucky you!  I have never had hare.  Was it all that different from
wild-caught rabbit?

Since those ancient days of tribal conflicts, the Philippines has
become much more civilised and non-bloodthirsty, as exemplified by the
non-violent "People Power" revolution that removed Marcos from office.
One could presume that the influence of religion was responsible, but
other countries with the same main religion, such as Mexico and some
of the South American states still suffer much violence.

Legal marriages might have been officially frowned upon, but by the
appearance (as seen on TV) of the locals in Brazil and Argentina, and
people from there who I have met, miscegenation happened quite often,
over many generations.

I rather like harsh, bitter tasting greens, such as the outer leaves
of cos lettuce, aibika and collards.  Those flavours set off sweeter
things like prawns and coconut.

BTW, a little while ago I was trying to think of the presumably USAn
company which now controls the Adelaide to Darwin rail service.  It
came up in a news item about the latest derailment on that line.  It
is "Genesee Wyoming", if that means anything to you.

      Title: Railway Sweetbreads A La Financiere
 Categories: Railroad, Offal, Main
      Yield: 4 Servings
 
      1 lb Sweetbreads
      1 ts Salt
      1 ts Lemon juice
           Seasoned flour
      2 tb Butter
      4 sl Toast, crusts removed
      2 c  Sauce financiere
      2 tb Parsley, minced
 
  Soak sweetbreads 30 min in cold water; trim.
  
  Blanch for 15 min in boiling water with 1 ts salt and 1 ts lemon
  juice. Drain and cool.
  
  Toss sweetbreads in seasoned flour and saute in butter.
  
  Put toasts in individual casseroles. Top with sauteed sweetbreads, hot
  sauce financiere, and minced parsley.
