Ärende: Drying peppers
======================
Hi Dave,

DD> doing things at my "comfort level". I consider myself to be a moderate
DD> in things chile and political.

RH> We're more conservative politically but shade a bit hotter than
RH> moderate (Steve more so) on things chili and hot related.

DD> Chile tolerance varies - what I consider moderate some think extreme.

Very true. One of my friends in AZ/HI couldn't tolerate anything hotter
than a bell pepper. I vary, depending on what the heat level is and how
much heat I've had recently. I think I've earned the respect of my BIL
David tho in the fact that I've tried (and tolerated) the hot stuff he's
offered us.

DD> Last picnic at Dale and Gail's he was making a beef dish (I think it
DD> was Cajun - but my memory is a bit fuzzy on that) which he said he
DD> gotten too hot. Other Dave, Glen, Michael and I all asked "Where's the
 DD> heat?"

I think I had a bit of it but don't remember the heat level. I do
remember both the smoked pork and crab cakes being Very (!) good. IIRC,
Steve tried a bit of the pork and found it good; I think that is what
started him eating a bit more pork. He'd still rather have a good ham
than pork roast but at least he's eating pig again. He bought a couple
of packages of peppered bacon while at my folks. The only grocery store
in town sells that and a non peppered that are cured without nitrites
and do not need to be refrigerated until opened. They only had the
peppered while we were there this time; it's now repackaged into smaller
quantities for the freezer (and a bit in the fridge).

DD> The relish recipe is something for big meals/parties. I eat cranberry
DD> sauce very seldom - because of the sugar hit. But, I will drink
DD> cranberry juice from time to time - mostly because I suffered from a
DD> kidney stone a few years ago. One of those was sufficient for a

RH> According to the CT scan I had last month, I've got some of those too.
RH> But, I'm not going to drink cranberry juice unless there's no other
 RH> alternative.

DD> Like I said - the jury is still out on its efficacy. So, you're
 DD> probably safe. Bv)=

Good! (G) Just hope the kidney stones don't try to give me any trouble.
One of our friends in HI had trouble with them, from too much calcium.
My primary care doctor told me to skip the calcium on week ends,
probably for the same reason.

DD> lifetime. And while the jury is still out on whether the oxalates in
DD> cranberry and/or apple juice do any good in preventing a recurrence
DD> ... I like the taste of the cranberry (or cran-apple) juice once in a
 DD> while.

RH> I'm more of an orange juice for my regular morning wake up juice. Grape
RH> and apple are good other times, especially mixed with ginger ale.

DD> I don't (and never did) care for orange juice. It leaves a cloying
DD> sweetness in my mouth that hangs about for hours. I really prefer
DD> unsweetened grapefruit juice as an eye-opener. Fortunately St. Google

To each his (or her) owm (tastes) in morning wake ups.

DD> and Web MD and the
DD> pharmaceutical companies web sites tell me that grapefruit juice won't
DD> affect the medications which I take (Amaryl and Zestril - the generics
 DD> for them anyway).

I've got to check out my meds--but none have come with an "avoid
grapefruit juice" warning label so I'm probably safe.

DD> Title: Chicken Giblet Vegetable Soup
DD> Categories: Diabetic, Poultry, Soups, Vegetables
 DD> Yield: 6 Servings

RH> I'd rather make my chicken soup with odds and ends of chicken scrap
RH> pieces. I'll also sometimes start by cooking a whole chicken and
 RH> deboning/shredding it.

DD> You will have noted that the recipe said "Uncle Dirty Dave's Kitchen"
DD> at the bottom - meaning only that it something that I have made. I
DD> like giblets - but, I have some friends who don't. So, when they buy
DD> whole chickens they bung the giblet package into the freezer to save
DD> for me. And once in a while I will make up a pot of the soup. I also
DD> make soups from chicken backs, etc. And chicken & noodles from leg
DD> quarters I get on sale across the street - usually for less than U$7
 DD> per 10# bag.

I save backs, necks, etc but usually cook up the giblets at the same
time I cook the chicken. Then I pop them in the fridge and let Steve
know they're available for noshing. I've noticed tho, that a lot of
poultry packers aren't including the giblet packets with the chickens
the last 10 years or so.

DD> Chicken is *very* versatile. Bv)=

Quite so, and usually reasonably priced.

DD> Title: Dirty Dave's Old Fashion Chicken & Noodles
DD> Categories: Poultry, Pasta, Vegetables, Herbs
 DD> Yield: 5 Servings

 DD> 500 g (17.6 oz) Swabian Spaetzle *
 DD> 28 oz (2 cans) chicken broth
DD> 2 Chicken leg quarters; cooked
DD> - meat removed from bone and
 DD> - shredded
 DD> 1/8 ts Ground sage
 DD> 1 ts Celery seed
DD> 1/4 ts (to 1/2 ts) "Italian" herb
 DD> - seasoning
DD> 10 3/4 oz Can cream of chicken soup
 DD> 1 1/2 c Left over chicken gravy
 DD> +=OR=+
DD> 12 oz Jar Heinz chicken gravy

DD> * Deutsche Kuche found at ALDI. These are as good as I
DD> can make from scratch on a good day. And not expensive.

I'd do an easy whole wheat noodle. I've got one that can be done in just
a few minutes, no drying time neccessary.

Looks good but I'd make a few subs, including whole wheat noodles. Home
made stock, home made "cream of chicken soup" (chicken flavored thick
white sauce), and home made chicken gravy.
