Rum and coconut water is indeed very good together.  I can't get
green coconuts here, just ripe ones, but I do get canned coconut
water (with little chunks of meat at the bottom) for under $2 per
small can at my Vietnamese owned, Filipina staffed pan-Asian store.

I thought they were a Puerto Rican company that branched off into
Mexican foods but you're right, the founder was Spanish and he
started off by importing Spanish foods into the USA. HQ is in New
Jersey. There is a huge processing plant in Puerto Rico though.

I wish their stuff was more widely distributed in Canada, but it
isn't. I guess we don't have enough Hispanics. The sole distributor
is Les Aliments Morales in Montreal. I just now have email in to
them to see if they have any retailers at all in western Canada.

      Title: Tocacho Con Cecina
 Categories: Latin amer, Beef, Preserving
      Yield: 4 Servings
 
           (Tocacho with Cured Meat)
           Cow meat
           Oil
           Fried banana
           Salt
 
  Carne de Cecina is cured meat. This meat takes one week at
  sunlight to be dried out.
  
  To prepare this food, fry the cured meat. On another saucepan fry
  again, the already fried banana, and then crush it, until you have
  small pieces.
  
  This food has to be served hot, for it to be more tasteful.
  
  It can go together with some hot beverage, such as coffee, tea or
  mate de coca.
