Odd, innit, how customers get trained. I was talking to my friend Jungle Jim
yesterday and he was noting that many of his first time customers will stand by
the entrance waiting for a hostess to come seat them. Even after someone has
said "Sit where ever you like, folks".

And younger customers (teens and early twenties) will stand or sit looking at
the walls behind the counter - which aren't unique nor overly interesting. Jim
says he figures they are looking for the menu boards that are present in all
fats food and burger snatcher stores. Sometimes they get offended when they
find that the #1 breakfast requires them to make choices ... how the eggs are
cooked, what type of tatties, which meat, and if sausage - links or patties,
and what sort of toast. Oh, yeah, beverage extra.   Bv)=

      Title: Bacon Cheese Pie
 Categories: Pies, Pork, Cheese, Dairy, Eggs
      Yield: 6 Servings
 
MMMMM---------------------------PASTRY--------------------------------
      1 c  All-purpose flour
    1/3 ts Salt
        ds Garlic salt
    1/3 c  Shortening
      2 tb (to 3 tb) cold water

MMMMM--------------------------FILLING-------------------------------
      6 sl Bacon
      3 oz Emmenthaler cheese; sliced
      4 lg Eggs; lightly beaten
      1 tb All-purpose flour
    1/4 ts Salt
    1/8 ts Pepper
        ds Cayenne pepper
      2 c  Light cream
 
  For the pastry crust: Sift together the flour, salt and
  garlic salt. Cut in shortening to size of small peas. Add
  cold water a teaspoon full at a time, while tossing the
  mixture lightly with a fork. Press together, flatten
  slightly, chill 10 minutes. Roll to fit 9" pie plate.
  
  For the filling: Dice bacon, fry crisp. Drain, spread in pie
  shell, cover with cheese slices. Combine other ingredients,
  strain into pie shell. Bake at 400øF/205øC for 15 minutes,
  reduce heat to 325øF/160øC for 25-30 minutes more, until
  silver knife inserted in pie comes out clean.
