Ärende: Snow days

I wish we would have missed it - or it missed us. Still, it was 59øF here
yesterday - and all but the big piles of snow that the plows stacked up are
gone.

DD> Oh, and it is properly called "climate change". Global warming is,
DD> like much today, an invention of a lazy segment of the media.

RH> True, and it is very cyclical. Look far enough back in recorded history
RH> & you'll find that the weather patterns repeat themselves. I've read of
RH> one year (early 1800s, IIRC) called the year of no summer because it
RH> was so cold. A disasterous time for farmers, to be sure.

The cycles and swings are wider and wilder and less predictable. I'm not sure
that the tree huggers are 100% right - but, I am sure that the man-caused
greenhouse gasses have contributed quite a bit to the problem. However, the
solution(s) are all non-viable because the "interested" parties (the gummints)
are about as likely to cooperate as is the current US Congress.

 DD> Back in the late 40s - maybe 1950 or 51 I remember eating 4th of July
DD> ice cream and pie huddled around the pot bellied stove in the living
DD> room because the outside temperature was in the high 30øF range.

RH> Fireworks would have warmed you up?

Not unless they burned down the house. And that would have been temporary. I
don't recall having fireworks on the 4th that year. Other years I have a clear
(well, fairly clear) memory of helping my Dad set up the air-burst fireworks
and the display stuff. And being allowed to touch off some of the fuses. But,
nothing for that year.

DD> Farmers did not do well that year either. The corn really suffered.
 DD> Wheat did OK, IIRC

RH> Before my time so I can't corroborate.

I was there and I can attest to the decent wheat crop. My grandfather had also
planted rye and oats as part of the enhanced crop rotation he was assessing.
IIRC the small grains took up a lot of the slack from the weak corn yields.
Soybeans - I dunno. I didn't hear anyone crying about their bean crop. But, in
those days soy was not the HUGE thing it has become.

      Title: Texas Firecrackers (Poppers)
Categories: Appetisers, Chilies, Poultry, Cheese, Breads
      Yield: 12 servings

     24 Jalapenos; stemmed, seeded
6 oz Monterey jack; cut in
           - rectangles
      6 oz Chicken; in strips
     24 Sheets phyllo dough; thawed
           Butter flavor cooking spray
     48 Fresh long chives; opt

Select 24 peppers, use others for garnish.

Remove and discard stems and seeds from peppers, drain
  thoroughly on paper towels.

Stuff each pepper with one piece of cheese and 1 chicken
  strip.

  Spray both sides of 4 phyllo sheets with cooking spray;
stack. Cut stacked phyllo in half lengthwise and then
  crosswise.

Place 1 pepper on each phyllo stack, at one long end.
Starting with the long end, roll phyllo around pepper.
Twist ends to seal. Place on a baking sheet. Repeat with
  remaining phyllo and stuffed peppers.

Bake at 375øF/190øC for 20 minutes or until golden. Tie
twisted ends of pastry with chives, if desired. Serve
  immediately.

Serve with salsa for dipping the twisted ends.

If you substitute banana peppers, roast at 400øF/205øC
until charred. Cool completely; remove and discard stems
  and seeds.

Slice the green portion of green onions lengthwise and
  substitute for chives.

Freeze unbaked Texas Firecrackers in an airtight container
up to 3 months. To serve, bake as directed, and tie with
  chives, if desired.

Notes: True to their name, these appetizers start with a
little sizzle, and when you discover the peppers inside,
they end with a nice "pow."
