========================
Hi Michael,

RH> That wasn't going to be your post music career?
 ML> Har.
RH> I presume you saw that my tongue was planted in my cheek when I asked
 RH> that question.

ML> That was a dismissive snort at a bad joke, not at a stupid idea.

Either way, not your post music life.

ML> The business being a low-margin one, every bit helps, plus the
ML> procedure cuts down on waste.
RH> Yes, because at a lot of places we ignore the bread basket.

ML> The oddity in my perception of the situation is thus: if the
 ML> bread basket doesn't come, I don't mind (unless I am having
ML> something that needs bread - once at a very, very famous
ML> restaurant I got escargot but no bread, which was distressing).

Now that's odd; I can't remember any time when Steve ordered them that
they didn't come without some sort of bread, usually thin triangular
toasts.

ML> If it comes with just one or two rolls, I feel somewhat slighted!

If you're by yourself, I should think 2 rolls would be sufficient. You
could always ask the waiter for another one. OTOH, one roll is a bit
parsimonious, even for a solo diner.

ML> And if it comes overflowing, I cluck to myself at the waste and
ML> hope that the kitchen will grind up the leftovers into crumbs or
ML> otherwise make use of them.

I think that it has to be tossed out according to industry standards.
Whether it actually is, or if it is recycled, is another question.
Probably depends on the kitchen and how close a margin they run on
making a profit or not.

ML> were not so generous and served two unfull bowls to a long
ML> table of 12 or so.
RH> Cheaping out, usually the first sign of a place going downhill.

ML> Heck, the place has been going downhill for 45 years (at least
ML> between my first and latest visit). But the unfull bowls are
ML> similar to the bread issue as above, so I had mixed feelings.

Well, better that they still had the pickles, instead of discontinuing
then altogether then. Still, for 12 or so people, 2 full bowls should
have been set, not 2 unfull bowls, unless someone in the back wasn't
paying attention and sent out the smaller set by accident.

Catch you later,
Ruth
