It has something to do with the muscle fibers. They just crumble
up at some point, turning into either dry sawdust or wet sawdust,
the option is yours. I find the mouthfeel of eye round pretty
unpleasant unless rare rare.

 I don't understand. But,

Bottom has some of the best flavor on the beast, and top is
tender and reasonably tasty. The eye, well, about the best
thing you can say of it is that if you cut it right, it will
oxidize quickly, and the surface will get pretty shiny colors,
like an oil slick.

Chuck has the absolute best flavor on the beast. I cut up a
blade roast today and ate the fatty and odd-shaped and gristly
trimmings: glorious, though I was picking gristle out of what
remain of my teeth for an hour after.

      Title: Campers Hobo Pie
 Categories: Ground beef, Beef
      Yield: 4 servings

      1 lb Ground beef                         1 md Onion, sliced in 1/4"
      4    Carrots sliced                           Pieces
      2    Potatoes cubed                           Butter

  Form hamburger patties and put one patty,with individual servings of whole
  carrots,sliced potatoes and sliced onions,on a sheet of aluminum foil.Brush
  everything with butter and sprinkle with salt and pepper.Fold foil over
  food and place on charcoal or open fire Cook for an hour,turning every 15
  minutes.Chicken can be substituted for the hamburger meat. Source unknown
