Same here..

True.. I remember Ron's Dad bringing us a 50lb bag of potatoes that he'd picked
up for us -special- (bg).. he and my mother-in-law thought we would eat them up
since at the time, we were a struggling young couple with a new baby (now we're
just a struggling OLD couple LOL).  Anyway, Ron took a look at the size of the
bag and said,"Uh Dad, we're really 'macaroni devotees here'" hehe.. I was happy
to hear him say it.. in my mind, I figured my brain-washing was working (haha).

That said, I really do like potatoes :)  I have an earth-box (one of those
large planting containers with a fancy watering system) in my bay window in the
kitchen.. Last month a threw some potatoes with sprouts starting in there,
rather than see them go to the garbage pail.. and of course they're growing
like crazy about now..  Don't know if this will work, today I put a bunch of
rigid cardboard placemats all around the exterier edge of the earth box.. then
I was able to "hill up" the plants.. might get a pile of potatoes, we'll see :)

That is an interesting recipe.. I don't have an eastern potato salad recipe, so
that was great.  I do have one that is for a Korean potato and beef stew.. it's
also pretty good.  We love Kimchi so.. :)

    Spicy Korean beef stew
     7 ounces beef, thinly sliced (boneless beef rib, or other)
     3 dried shitake mushrooms (soaked in water to reconstitute)
     5 small green peppers
       (but I like to use about about 1/2 cup kimchi instead :) )
     2 Tablespoons veg. oil

     1 tsp ground chili pepper (kimchi takes care of hotness so you don't
       really need this if you use kimchi.. then again.. (g))
     1/2 tsp crushed garlic

     Cooking sauce:
     2 cups beef stock
     3 Tbsp Soy sauce
     2 Tbsp sake
     2/3 Tbsp sugar
     1/4 Tbsp Mirin

    1 t sesame oil
    white part of green onion
    chili pepper for garnish

    Slice potates in 1/2 inch slices.  Soak in water to remove starch.  Drain.
Cut beef into 1/2 inch long rectangles.  Discard stems of mushrooms and cut if
necessary.  Discard Stems of green peppers if you're using them.

Heat the veg. oil. Add the kimchi and saute for about 3 minutes.  Add the
potatoes and beef.  If you're using the green peppers hold on, they're coming
later..

Combine all the cooking sauce ingreients, add to the pan.  Cook over medium
heat until the sauce is reduced by half.  Add mushrooms and continue to cook.
(now) stir in the green peppers if you are using them.   Immediately remove
from heat.  Pour sesame oil rolling around the sides of the  pan.  Serve
garnished with shredded green onions and either maybe some kimchi on the table
:)

After entering this recipe, I think tomorrow I'll make bibimpap.. also a big
favorite over here :)
