We made it into the sixties ... and then got another 4" of snow. The 
transition to spring is taking the temperatures up and down like the 
prices on the stock market.

I wear red shirts as part of my work uniform -- and they stain as badly 
as any other colour. Not to mention that I avoid that colour when not 
required to wear it as part of a uniform ... for the most part.

We are somewhat closer to much of the meat supply than the northern 
right coast. Makes a difference.

Not my nutritional analysis, nor my recipe. I posted it because it 
somehow related (at least in name) to the subject at hand.

Yuppies where you hang out may not. I am referencing the Great American 
Outback here. Apparently there are differences that Fuddpuckers 
financial models had a problem dealing with.

MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Yuppie Kolcannon
 Categories: Potatoes, Vegetables, Dairy
      Yield: 6 servings

      6 lg Potatoes; quartered
      2 tb Balsamic vinegar
      4 c  Shredded green cabbage
    1/2 c  Butter
      1 c  Milk
      2 tb Extra-virgin olive oil
      1 lg Carrot; grated
      1 sm Onion; quartered, sliced
      1 tb Garlic salt
      1 ts Ground black pepper

  Place the potatoes and balsamic vinegar into a large pot and
  cover with 2 to 3 inches of water. Bring to a boil over high
  heat, then reduce heat to medium-low, cover, and simmer for
  about 12 minutes. Place cabbage in a metal colander, then
  place the colander into the pot with the potatoes. Continue
  simmering until the potatoes are tender, about 8 minutes
  more. Remove the colander of cabbage, drain, and set aside.
  Drain potatoes and allow to steam dry for a minute or two.
  Place potatoes in a large bowl. Mash the potatoes with
  butter and milk until smooth. Set aside.

  Heat the olive oil in a skillet over medium-high heat. Stir
  in the carrot and onion; cook and stir until the onion has
  softened and browned, about 10 minutes. Stir in the cabbage,
  and season with garlic salt and pepper. Mix the cabbage
  mixture into the mashed potato.

  Serve immediately.
