That's neat-I didn't know you could make soy milk at home.  Maura evidently
detests the taste of soy milk from what she's told me.  She goes through almond
milk very, very slowly, so even at near $3 a half-gallon, she can make it last.

I need to wean myself off of cow's milk.  Too expensive and I'm allergic to
whey...

School is going very well for her.  She is now taking her advanced classes.  I
belive one is "Civil War and Slavery History" and the other is "Life in Time"
(geology).  I'm starting to study up on my algebra since I've not touched it in
20+ years.  It's interesting that this year, the fall semester will start on my
39th birthday, August 27th, which will make it 21 years since I last was in
college.  I'm really looking forward to it.

Today I have a phone interview for a job (won't say what it is just yet), but
if I can swing this, Maura and I will be doing very well for ourselves. :)

      Title: Pepsi-Cola Cake With Broiled Peanut Butter Frosting
 Categories: Cakes, Desserts, Soda pop
      Yield: 8 Servings

MMMMM----------------------------CAKE---------------------------------
      2 c  Flour; Unbleached
      2 c  Sugar
    1/2 lb Butter
      2 tb Cocoa; Unsweetened
      1 c  Pepsi
    1/2 c  Buttermilk
      2 ea Eggs; Large, Beaten
      1 ts Baking Soda
      1 ts Vanilla Extract
  1 1/2 c  Marshmallows; Miniature

      6 tb Butter
      1 c  Brown Sugar; Dark, Packed
    2/3 c  Peanut Butter
    1/4 c  Milk
    2/3 c  Peanuts; Chopped

  CAKE: Preheat oven to 350 degrees F. Grease and flour 9 X 13 X 2-inch
  pan. Combine flour and sugar in large bowl.  Melt butter, add cocoa
  and Pepsi. Pour over flour and sugar mixture, and stir until well
  blended.  Add buttermilk, beaten eggs, soda, and vanilla.  Mix well.
  Stir in marshmallows. Pour into prepared pan.  Bake 40 minutes.
  Remove cake from oven and frost while still warm. FROSTING: Cream
  Butter, sugar, and peanut butter.  Add milk and stir well.  Add nuts.
  Spread over warm cake. Place frosted cake under broiler about
  4-inches from heat source. Broil just a few seconds, or until topping
  starts to bubble. DO NOT scorch! Let cool at least 30 minutes before
  serving.
