As I said - I couldn't detect *any* pepper in Popeyes non-spicy.

No celery? How can it be Cajun???? Ground celery seed would work, I 
think. And jack up the cayenne, too.

Here's my Creole Sprinkle (which also has no celery - but, then I don't 
claim Cajunicity for it.  Bv)= )

      Title: Uncle Dirty Dave's Creole Seasoning (Sprinkle at table)
 Categories: Condiments, Herbs, Chilies
      Yield: 1 batch

    * 7 parts paprika
    * 6 parts salt
    * 6 parts garlic granules
    * 3 parts black pepper
    * 3 parts onion granules
    * 3 parts cayenne pepper
    * 3 parts dried oregano
    * 3 parts dried thyme

Combine all the ingredients in a mixing bowl. Blend well. 
Can be stored in an airtight container in your spice 
cabinet for up to 3 months.
