I understand they've evolved - every time a kid gets mashed,
the designs are reevaluated, perhaps a benefit of having
lawyers hovering over everything all the time. Now they're
nice and light (the seats, not the lawyers) but have fancy
impact absorbing foam (every one I checked runs 20-24 lb).

We have had some truly great times together, sometimes by
ourselves, as going to Scampo (see below - and yes, that's
half a cup of fat per serving), and sometimes with up to a
couple hundred of our nearest and dearest (see starmegado.com,
which features a picture of Lilli but not, so far as I know,
of me).

Chicharron with Spaghetti
Categories: pasta, bizarrely unhealthy, main, starter, celebrity
Serves: 4

1 c pork belly fat
Salt and pepper
1/2 Tb baking powder
1/2 c extra-virgin olive oil
2 Tb garlic, chopped
2 Tb red jalapeños, seeded & chopped
2 Tb Italian hot cherry peppers, seeded & chopped)
10 oz cooked spaghetti
16 parsley stems, finely chopped
8 Tb butter
1/4 c parmigiano reggiano

Cut the pork belly fat into strips, and then into cubes.
Sprinkle with salt and baking powder. Pour 1/4 c olive
oil into a pan and place the cubed pork fat into it.
Saute the pork on low-to-medium temperature 10-12 min.
Once it is crispy, set aside.

Add 1/4 c olive oil to a pan and let it warm up to 350F
(medium heat). Add garlic and fry for about 1 min. Add
the red jalapenos and Italian hot cherry peppers to the
pan. Saute for about 3 min.

Add your cooked spaghetti to the pan and saute.
Sprinkle with parsley, salt, and pepper for seasoning.
Once the ingredients in the pan are mixed, turn off the
heat and stir in butter. Lastly, add in parmigiano.

Serve the dish on a warm plate. Place spaghetti on
plate and top with the chicharron. Garnish with a
sprinkle of parsley and parmigiano reggiano.

M's note: I have had this dish half a dozen times,
because the restaurant is literally next door to my
cardiologist's office, and always the parm is on the
side. I do not remember if that is by my request or
the way it comes.
