MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Apple Dumplings
 Categories: Desserts, Pastry, Fruits
      Yield: 4 servings
 
      5 md Cooking apples; peeled,
           - sliced
    3/4 c  Apple cider or apple juice
    1/2 c  Dark-colored corn syrup
    1/4 c  Sugar
      1 ts Ground cinnamon
      1 ts Vanilla
    1/4 c  Butter; melted
      2 tb Cornstarch
           Pastry for Double-Crust Pie
 
  In a saucepan, combine the apples and apple cider. Bring to
  boiling. Reduce heat and simmer, covered, for 5 to 7 minutes
  or until just tender.
  
  Stir in the corn syrup, sugar, cinnamon, and vanilla.
  Combine the melted butter or margarine and the cornstarch.
  Stir into mixture in saucepan.
  
  Cook and stir the mixture over medium-high heat until
  thickened and bubbly. Remove from heat.
  
  Prepare pastry. Roll out 2/3 of the pastry to form a 15-inch
  square. Cut into four 7-inch circles. Ease pastry circles
  into four 10-ounce custard cups or baking dishes. Do not
  trim edges. Roll out remaining pastry to an 11-inch square.
  Cut into four 5-inch circles for top crusts.
  
  Fill each pastry-lined dish with 1/4 of the hot apple
  mixture. Top with remaining crust, cutting slits for steam
  to escape. Fold extra pastry under bottom crust and seal.
  Flute edges.
  
  Bake in a 375øF/190øC oven for 35 to 40 minutes or until
  crusts are golden. Cool slightly on wire rack. Serve the
  dumplings warm.
  
  Makes 4 servings.

      Title: Toffee Apple Turnover Pie
 Categories: Pastry, Desserts, Fruits
      Yield: 4 servings

      1 c  All-purpose flour
    1/4 ts Salt
    1/3 c  + 1 tb shortening
      2 tb (to 3 tb) cold water

MMMMM--------------------------FILLING-------------------------------
  1 1/2 c  Sliced, peeled apples
      1 tb All-purpose flour
    1/2 c  Toffee bits
      1 lg Egg; beaten
      1 tb Coarse white sparkling
           - sugar
 
  Heat oven to 375øF/190øC. Line cookie sheet with sides or
  15" x 10" x 1" pan with cooking parchment paper or foil. In
  medium bowl, mix 1 cup flour and the salt. Using pastry
  blender (or pulling 2 tables knives through ingredients in
  opposite
  
  directions), cut in shortening until particles are size of
  small peas. Sprinkle with cold water, 1 tablespoon at a
  time, tossing with fork until all flour is moistened and
  pastry almost leaves side of bowl (if necessary, 1 to 2
  teaspoons more water can be added).
  
  Gather pastry into a ball. On lightly floured surface, shape
  pastry into flattened round. Using rolling pin, roll into
  12-inch round, about 1/8 inch thick. Place on cookie sheet.
  
  In medium bowl, toss apples and 1 tablespoon flour. Mound
  apple mixture on half of pastry to within 3/4 inch of edge.
  Sprinkle with toffee bits. Fold pastry in half over apple
  mixture. Fold 1/2 inch of sealed edge of pastry over; firmly
  press tines of fork around edge to seal. Brush top of
  turnover with egg. Cut 3 slits, 1 inch long, in top to vent
  steam. Sprinkle top with sugar.
  
  Bake 30 to 40 minutes or until golden brown. Immediately
  remove from cookie sheet to serving plate. Cool 30 minutes
  before cutting.
  
  Food Processor Directions for Making Pastry: Into small
  bowl, measure 2 tablespoons water. In food processor, place
  shortening, flour and salt. Cover; process with on-and-off
  pulses until mixture is crumbly. With food processor
  running, pour water all at once through feed tube,
  processing just until dough leaves side of bowl (dough
  should not form a ball).
