      Title: Dark Chocolate Cookies

      Yield: 3 servings
 
    3/4 c  All-purpose flour
    3/4 c  Unsweetened cocoa powder
    1/2 ts Baking soda
    1/2 ts Salt
    3/4 c  Unsalted butter; softened
      1 c  Sugar
      2 lg Eggs
      1 ts Vanilla
 
  Preheat oven to 375oF/190oC.
  
  Whisk together flour, cocoa, baking soda, and salt in a
  medium bowl.
  
  Beat together butter and sugar with an electric mixer
  until pale and fluffy, then beat in eggs and vanilla until
  combined. Add flour mixture and mix just until combined.
  
  Drop level tablespoons of dough about 2 inches apart onto
  ungreased baking sheets and bake in batches in middle of
  oven until puffed and set, about 12 minutes.
  
  Transfer cookies to a rack to cool.

      Title: Fudgy Coffee Brownies

      Yield: 32 servings
 
    1/2 lb Unsalted butter
      5 oz Unsweetened chocolate
      2 tb Instant-espresso powder
      2 c  Sugar
      1 ts Pure vanilla extract
      5 lg Eggs
      1 c  All-purpose flour
      1 tb Cinnamon
    1/2 ts Salt
 
  Preheat oven to 350oF/175oC with rack in middle. Butter
  and flour a 13" X 9" baking pan.
  
  Melt butter and chocolate with espresso powder in a 3-quart
  heavy saucepan over low heat, whisking until smooth. Remove
  from heat and cool to lukewarm. Whisk in sugar and vanilla.
  Whisk in eggs 1 at a time until mixture is glossy and smooth.
  
  Whisk together flour, cinnamon, and salt, then whisk into
  chocolate mixture.
  
  Spread batter in pan and bake until a wooden pick inserted
  in center comes out with crumbs adhering, 25 to 30 minutes.
  Cool completely before cutting.
