If you probed the reasons for her dissatisfaction and
found her quibbles low on your list of priorities. There
are shortcomings that many of my friends percieve that
don't bother me and are even causes for my uprating
places. Fatty meat, undercooked meat (including chicken),
vegetarian unfriendly, vegetarian friendly, slow service
(if there's a good reason), smells like garlic/onions/hot
pepper/smoke, divey, too fancy, and so on.

I've pretty much made do with a combination of public machines
(hotels and such and the occasional hour at an Internet parlor),
friends' printers, and this one, which has traveled 980000 miles
with me (paid, so probably counting free tickets over a million).
A rocky relationship at first, but three power supplies and a
keyboard later, I appreciate the fact that in 40 round the world
equivalents and numerous droppages and squashages, it keeps
running, though not always well.

It's a pretty common type of dish south of, say, the
Mason-Dixon line. But then there are pasties and pies
and such, so maybe one should say ubiquitous.

Tuna Empanadillas
Category: Tapas
Yield: 12 to 14

h - Pastry
15 g butter
2 ts mild olive oil
1/2 egg
1/2 glass water
150 g flour
salt
h - Filling
1 Tb olive oil
1 clove garlic
1 ts chopped cured ham
2 anchovies
1 Tb fried tomato puree
190 g cn tuna in escabecbe
1 finely chopped red pimiento
a little chopped parsley
salt and pepper

These deep-fried pasties, called empanadillas, are
found in bars all around Spain.

Make the pastry. Put the oil, butter and water into
a saucepan, heat and stir in the flour and the egg.
Leave to rest in a cool place and make the filling.

Heat the olive oil and saute the garlic, ham,
anchovies, tomato puree, flaked tuna fish, and
chopped pimiento; when cooked, stir in the parsley
and season. Roll out the pastry thinly, cut 10-cm
circles and with them make half-moon pasties folded
over teaspoonfuls of the filling, crimping the
curved seam. Deep-fry in plenty of oil.
