Meatless, though incomprehensible, isn't so extreme as
protein-free.

I share that sentiment on the occasions when by choice or
necessity I've had such a restricted diet.

     Back when she was a young single mom and a
 JW> starving student, one of her cheap but tasty dishes for a crowd was
 JW> a potato and hard boiled egg casserole.

For me tofu was always a viable fallback, and since I
first tasted them, black, red, or green dal, which can
be excellent as well as nutritious. In fact, after that
run of pasta upon pasta, the foods that called to me
were, in this order, agedofu and Thai catfish with basil.
There were none of these available where I was, so I
watched a friend devour a buffalo chicken wrap while I
consumed multiple iterations of Maker's Mark no ice and
Coke no ice. Flew out to Annie's, where I eased into
reality with a shrimp basket (five 30-counters and a
huge pile of soggy French fries) at this place Rivals,
where the service and the beer are good and the food is
nasty, but which my friends Dan and Mike wanted to try
for lunch. Thence: 20 oz ribeye for dinner yesterday;
20 oz ribeye for lunch today; bowl of chili and some
flank steak trimmings for dinner. The week has averaged
out to normal protein intake thereby, perhaps saving me
from death or a fate worse than that.

Tomatoes and potatoes go surprisingly well (the cocktail
sauce meant for the puny shrimp rendered the French fries
described above almost edible), and a couple eggs, that's
protein enough, if the eggs are fresh (according to my
friend McCully, whom I trot out as an authority when what
he advocates corresponds to what I'm thinking, and whom I
ridicule furiously when it doesn't).

Well, isn't it? 

Although there's nothing says Easter like a good
bunny alla cacciatora.

Rabbit cacciatore
cat: Italian, Neapolitan, game
servings: 4

3 Tb olive oil
1 rabbit (3+ lb), cut into 8 pieces
5 garlic cloves, minced
1 lb tomatoes, chopped, with seeds and juices (2 1/2 c)
1 1/3 c dry white wine
2 Tb chopped fresh thyme
2 Tb chopped fresh oregano
1 Tb chopped fresh rosemary

Heat oil in heavy large pot over high heat. Sprinkle
rabbit with salt and pepper. Add rabbit to pot and
saute until browned on all sides, about 10 min. Add
garlic; saute 1 min. Add tomatoes and wine. Bring to
boil, scraping up any browned bits. Reduce heat to
medium, cover and simmer until rabbit is cooked
through, about 30 min.

Using tongs, transfer rabbit pieces to plate. Add
herbs to sauce in pot. Simmer until slightly reduced,
about 5 min. Return rabbit to pot. Stir until heated
through, 3 min. Correct seasoning and serve.
