The appendix I've pretty much forgotten about. There's a
little twinge here and there, but even if I were in rural
France I could get myself to a respectable medical facility
in not much more time than I wasted getting to MGH.

The event is heavily subscribed anyway with a mix of affluent
people and those for whom this is the big treat of the year.
I'm somewhere in between.

It would be good for a change of pace is all. It's not uppermost
in people's minds as a destination, even though it has more
interesting topography (being a classic Pacific Ring of Fire
island), just as good food, and almost as good public transport.
Plus it has the greatest museum of Chinese art in the world,
thanks to Chiang's [s]banditry[/s] foresight in spiriting away
a huge number of treasures as the country fell to the Communists.

They are - and were. I felt slightly guilty about riding on
the economy fueled by the downtrodden - the national per caput
daily wage is about $3 to 5 (though the yuppies make a dozen
times that), but in this microcosmic scheme of things, there
is some trickle-down effect.

It was a good meal. Less adventuresome than if Lilli hadn't
been there, but still quite nice and a third the cost of
what the meal with the large group would have been.

Sloppy Joes
cat: sandwich, American, Singaporean
servings: 4

4 hamburger sesame seed buns
8 strips bacon (streaky or back, up to you)
4 eggs
4 sl monterey or sharp cheddar
2 Tb bacon fat (olive oil works in a pinch)
300 g minced beef
100 g minced pork belly
1 md yellow onion, minced
2 cloves garlic, minced
1 green pepper, diced 1 cm
1 c tomato puree
1 ts cumin
2 ts brown sugar
1 Tb cider vinegar
1 ts dried thyme
1 ds cayenne
1 Tb Worcestershire
1/2 c water

1) Fry garlic and onion in bacon fat drippings until soft
and caramelised, about 5 min on medium-high heat.

2) Add peppers and fry till toasty, about 3 min.

3) Add beef.

4) Add minced pork, taking care to break them apart.

5) Add tomato puree, cumin, sugar, cider vinegar, thyme,
cayenne, and worcestershire and stir through. Add water,
and let it simmer till almost reduced. That's the sloppy
joe part!

6) In a separate pan, grill bacon till toasty.

7) Fry egg any way you like, sunny side up, or scrambled.

8) Assemble sloppy joe, layered with bacon, a slice of
cheese (the heat from the fillings will melt it through),
and an egg between toasted sesame buns.
